Made this and it was a hit! I changed the California peppers for 2 jalapeño and 4 serranos (we like ours spicy) and added black beans. Ooweeee!

I made this recipe yesterday. It was delicious and everyone at dinner agreed. Next time though, I will use less chicken bullion and as some low sodium chicken broth. A bit salty for my taste. But really good!

Hey Claudia, hope you are feeling better... Best enchiladas I ever had were Chipotle cream chicken enchiladas at a restaurant in Minnesota that's now closed. Enchilada filling was shredded chicken thighs in a Chipotle cream sauce (medium spiced level). The sauce on top of enchiladas was a roasted tomato/Chipotle adobo/chicken stock/cumin-oregano/bay leaf/garlic/butter sauce. The restaurant then melted a Monterey Jack/xoachaca type cheese over the enchiladas in a salamander, and then served the entree with beans, guacamole, and fresh pico de Gallo. I've looked everywhere and can't find a comparable recipe. Name of restaurant was la mixteca. If you could make Chipotle chicken enchiladas, that would be awesome. Love your channel!
