The recipe will make 2 dozen enchiladas
Ingredients
Oil
Water for boiling
24 corn tortillas
Queso fresco
Mexican crema Fresca
Green enchilada sauce ingredients
10 tomatillos
5 roasted poblano peppers (remove step and seeds)
2 serranos
1 small white onion
2 garlic cloves
2 serranos or jalapeños
1/2 bunch of cilantro
1 1/2 cups chicken broth
1 Tbsp chicken bouillon
*I used onion, garlic, serranos, and chicken from the boiled chicken
Boiled chicken
4 chicken breast
4 cups water
1 onion
2 garlic cloves
2 serranos
1 Anaheim pepper (remove seeds and stem)
1/2 Tbsp Maldon sea salt flakes

I made this recipe yesterday and my family loved it! Keeping this one on hand for sure! I had a lot of leftover salsa so we made chilaquiles. The sauce got thicker and more flavorful left overnight. Thanks Steph!!

Yum! Yes them red pickled onions are so bomb! I make mine by boiling the onion for a min shock in ice water strain add lots of lemon or key lime juice and salt. Yummy

I had never had tomatillos until I moved to Oklahoma over 20 years ago. A restaurant here put a green sauce on several of their dishes. I had to ask what it was and they just called it tomatillo sauce. Man it is so good! It is so tangy. Those would hit the spot.

Detroit area here...I stopped at a roadside Mexican family BBQ about 12 or more yrs ago and bought some grilled chicken (everything listed for $5 !) maybe it was a quarter or half, but they included rice and stewed style pinto beans (not smashed refried style) and along with three flour tortillas they included some of the pickled onions, first time I ever had them but enjoyed many Mexican meals for many years before it. Learned how to make the pickled red onions for myself and been making them ever since. Sorry for the long story, love your channel. You do a great job!
