Made this tonight. Brilliant! All the other recipes for lemon chicken I’ve tried fell way short on lemon flavor. This was perfectly balanced. This is definitely going into our meal rotation. I had a good bit of the lemon-garlic vinaigrette left over and I expect that will make a great salad dressing. Thanks for another great recipe!

Careful with the grill brush……my hubby ended up in emergency with a metal sliver from a grill brush stuck in his throat…… lucky they could knock him out and get it out without surgery but it was close! Hospital said they had a ton of folks come in with this issue - I’m surprised we hadn’t heard about this before it happened. It was not a cheap brush either……..it was very painful for him so we don’t ever use those grill brushes anymore

I grew up on a poultry farm back before the mushy, frankenbirds came onto the scene. A “fryer” never weighed more than 3 pounds dressed. These days, the only way to buy a genuine frying chicken is from a local farmer… preferably a farmer who goes the extra mile and dry ages the fryers for a few days before taking them to market.

I have a spatchcock recipe that calls for a flat, foil wrapped, rock on top of the chicken. It helps cook it wonderfully. That sauce looks quite good. 😎

Julia did a similar recipe on ATK a couple of years ago during the pandemic "At Home" Season 21 - it was actually an encore of a recipe she first presented in Season 5. They also did a grilled version during Season 10 using actual bricks.

I made the best chicken of my life on the grill last week. It was spatchcock with spiced butter. It was so good and it disappeared (into my mouth) in a flash! I wish I had made 2.

I also basted in butter because I was cooking ribs too. I used the butter from this video: kzfaq.info/get/bejne/jK2DaaqLur65qqM.html I used Kinder’s bourbon peach rub which is great on everything! I made Mexican corn from this recipe and it’s delicious too: kzfaq.info/get/bejne/np6BZtZ8s9LJdYk.html I would imagine using Kenji’s recipe and cooking it in oven is just as delicious. Wouldn't you want to aim lower, since you are moving it to the hotter side for another few minutes, then resting, which the residual heat will carry the chicken to your desire temperature?

@@freemagicfun That's the bone, so not worry about. I will try this recipe, but only 155 for breast, and 165 for thighs. Carryover cooking will bring them way above 170 for both anyway.

Help.....great video...I want to watch Americas test kitchen videos on you tube. Do you have to pay to? I have a ?. I looked at seasons going back to beginning when i watched on PBS. DROPPED CABLE, FOR OBVIOUS REASONS. My question is: as an adult, who really does not scratch cook....this is 8/16/23....I watch you tube cooking shows, too. I always was taught to use unsalted butter in baking cakes, etc. Now. Everyone is ysing regular butter. I hardly use salt on my food, unless a recipe indicates. I am 77 now. You are a great infirmative person. This looks fantastic. I just have to wait until tomorrow and put on tray in sun and bake 😂....live in TX. IT HAS BEEN HORRIBLE THIS YR. THERE ARE THOSE THAT SAY NORMAL. NO, NOT NORMAL. LIVED HERE 57 YRS. SO, SHOULD I CHG TO USING REG BUTTER IF AND WHEN I BAKE AGAIN, WHICH WILL PROBABLY BE IN DEC. THE WAY THE CRAZY WEATHER HAS BEEN. ATK has a *ton* of potato salad recipes and have featured about a dozen on their TV shows over the years. Some are even in existing videos on this YT channel (including a Short from two weeks ago) - maybe try their search feature? You can probably locate more in the older shows which are available on several streaming platforms. Julia also does two potato salad recipes in this second season of Julia At Home (not yet on YT), but they may not be exactly what you're after as they're both vinegar-based, contain greens - the cool/cold one contains arugula/rocket and a warm one that contains kale.

I believe they're Wüsthof (5508). FWIW, ATK has never done an equipment review of poultry shears (or they haven't done one in many, many years) favouring instead the more versatile kitchen shears for cutting out chicken backbones. So, much like Julia's fancy Feder knife, the shears she's using are not endorsed by ATK. A comment on the their kitchen shears review from ATK Reviews Team Senior Editor Miye Bromberg indicated that she has been trying to get a review of poultry shears on their schedule for years so hopefully it will actually happen in the near future.

@@TopoGigio555 The chicken was done. 🙄 Modern chickens are typically only a few weeks old when they're dispatched and as such, their large bones (drumstick, thigh, sternum) are quite porous. This leads to the marrow within to become visible which causes the purple/red/pink on the bones which may even transfer a bit of pink to the meat. If you're using a decent thermometer and it's telling you your chicken is 160-165°F in the breast (although some prefer in the 150s) and at least 175°F in the thigh (it's food safe at the lower temp, it's just is a bit chewy), then your chicken is cooked. Colour is not an indicator of doneness.

Hey, it's crucial that you stop using metal brushes to clean your grill. This practice is very dangerous due to the risk of ingesting small metal fibers, which has been documented in many cases. Please look it up and switch to a safer cleaning method.

You could always do grilled tofu with this sauce. Just turn the rub she used at the beginning into a marinade. Then grill the tofu and lemons. You can still make the lemon sauce at the end for the tofu. Be the change you want to see.
