Preparing fruits- • JAMAICAN BLACK FRUIT C...
4 cups mixed fruits (soaked)
2 cups flour
1 1/2 cups sugar
1/2 pk (lbs) unsalted butter
6 eggs
2 tsp baking powder
1/2-1 tsp salt
1 tsp nutmeg
1 tsp Mace
1 tsp Cloves
1 tsp Jamaican mixed/allspice
2 tsp vanilla extract
1/4 cup browning
1 tsp Almond extract
1 tsp Rose Water
1 lemon (2 tbs juice+zest)
Rum and Wine to taste
1 tsp cinnamon
bake @325 for 1:45-2 hrs

I tried this recipe and it was fantastic. I bake one with water bath and the other without. The texture is different but they both taste delicious. Your instructions were easy to follow. No more buying a “slice” for $4. Thank you so much for sharing and God Blessings.

As a simple white boy I was lucky to have many holidays in Jamaica as a young boy! We had a cook who made this every Christmas, I made this two days ago and OMG!!! Absolutely fantastic it took me right back to those special times . The wonderful memories the wonderful people of Jamaica and!!!! The wonderful Black Cake. I remember my mother baking this cake when we lived in Jamaica. She would give us the bowl to eat the little batter she left in the bowl after pouring it into the baking tin. Seeing you make this cake brings back such great memories.

Have tried a few different recipes but this one is the bestest. To wash out the blender I add my wine and put it to whizz for 10 seconds and it gets everything out the corners. Do the same for washing the jug out just add soap and blitz.
