It's been quite some time since I made almond or coconut flour bread. As I have received some requests for almond and coconut flour bread, I did some experimentation and came up with this recipe. Frankly, I find almond bread to be quite dense compared to my other nut flour bread such as walnut, hazelnut and pecan bread which are much lighter, softer and fluffier. Coconut flour bread can also be quite dense and need more liquid as it is super absorbent. So combining these two flours can be a bit tricky hence, I had to add more baking powder and egg whites to help to boost the rise so that the bread is lighter. Even then, the rise was only moderate and the bread is slightly lighter and reasonably soft. Nevertheless, it is still a good bread if you like almond and coconut flour. And they are crispy when toasted.
This is a moderate loaf sized bread but because I used a smaller, narrower and taller pan, the bread looks bigger and taller. That my friends is the trick in using different sized pans which is basically the same for yeast bread. Of course, you can still use the standard 8x4" loaf pan but the bread will not look as tall. Actually, you can easily get all these various sized pans online and they are really useful to get nicer results.

NUTRITION INFO PER SERVING
Total Carb = 6.6 g
Dietary Fiber = 3.8 g
Net Carb = 2.8 g
Calories = 75
Total Fat = 4 g
Protein = 3.7 g
DRY INGREDIENTS
Almond Flour = 180 g (1 1/2 cups)
Coconut Flour = 60 g (1/2 cup)
Baking Powder = 21 g (1 1/2 tbsp)
Salt = 1/2 to 1 tsp
Psyllium Husks (Ground until half its original volume and weigh after grinding) = 27 g (3 tbsp)
(Note: It is highly recommended to use self-ground psyllium husks as it is more suitable for baking. However, if you are using pre ground psyllium powder, only 1 to 2 tsp is required as it is super concentrated. I suggest you start with 1 tsp and add a little gradually. It's fine if the dough is soft as it is a loaf, so no shaping is required unlike buns. If you add too much, the bread will be denser, wetter and stickier. In this video, I only used 1 tsp of psyllium powder for the bread, and it turned out fine, but it is still stickier than the bread with self-ground husks)
WET INGREDIENTS
Egg Whites = 7 large (249 g) OR 4 whole eggs (Note: The protein from egg whites helps to boost the rise while the fats from egg yolks hinders the rise. Using egg whites also prevents any eggy taste. Hence, it is highly recommended to use egg whites)
Apple Cider Vinegar = 57 ml (4 tbsp)
Hot or boiling water = 200 ml (2/3 cup +0.8 2 1/2 tbsp)
DIRECTIONS
1. Preheat the oven at 350F or 180C.
2. In a bowl, mix all the dry ingredients until well combined.
3. Add all the wet ingredients and mix until a soft dough is formed.
4. In the video, I used a smaller, narrower and taller pan so that the bread will look bigger and taller even though it is not a big loaf. The size of the pan is 7" width x 4" depth x 3 1/2" height. But you can also use an 8x4" loaf pan lined with parchment paper except that the loaf will not look as tall.
5. Pour the dough into the greased pan or shape into a loaf then place into the pan.
6. Spread the dough evenly and leave the top round so that the bread will look taller.
7. Top with almond flakes (optional).
8 Bake at the lowest rack for 60 mins or until a wooden skewer comes out clean.
9. Cool completely on a wire rack before slicing.
10. The bread is great toasted and spread with butter and keto strawberry jam (see link - • HOW TO MAKE KETO STRAW... ). It is excellent for sandwiches and french toast too.
11. The bread can be kept at room temperature for a few days if you have a cool and dry climate otherwise, its best to refrigerate them earlier. They can be refrigerated up to 1 week and frozen for months. It’s best to wrap the bread with parchment paper to prevent moisture from forming. For freezing, place sliced bread in individual plastic bags first.

Baked it today...and turned out amazing! I tweaked the recipe a bit...added 150 g almond flour, 84 g coconut flour, a tsp of guar gum,some stevia, a tbsp of olive oil and 8 egg whites instead of 7... Thank you so much for your recipe

Just made this one yesterday ...added some sweetener (because I just can't help ;-)...and a tbsp of nutritional yeast...HUGE SUCCES. Frankly, it tests better than the white breads I used to buy when not on Keto... believe me... I was very demanding on the quality. As usual, not disappointed 👍👍👌👌. THANK YOU . Greetings from France.

This looks PERFECT - thank you!! I've been trying to find a simple grain-free, low-carb bread but so many have flax (which I stay away from due to the immense amount of phytoestrogens it has- once in a blue moon is fine for me, but not more than that), and other unnecessary ingredients I don't want (millet, tapioca & cassava not so great for the thyroid). I found Julian Bakery's coconut & almond breads which are very good but also somewhat pricey - I'm going to give this one a try - it sounds very similar except their bread has no egg in it.

Absolutely ! You just gave me an idea to do a yeast version thank you ! You could maintain the recipe and just add 12 g (3 tsp) of instant yeast or reduce the baking powder a bit. But low carb non gluten flour wd not rise as much even with yeast. For proofing, you can use the oven to proof (Refer to my yeast bread videos).

Oooh! Another cool recipe. Will try it and see if my husband would like it or not. One question I’ve always wondered... why add the apple cider vinegar? Is that essential for activating the baking powder when baking? I find the smell is too strong for my taste can I swap it or omit it?...

In other recipes it does react with the baking powder and helps it rise. I never smell or taste vinegar after I bake something....maybe use half??? Good luck!

Apple cider vinegar helps with the rise and texture. Similar with Kathy, I have never tasted the ACV in the bread. But if it's a problem for you you can replace with white vinegar or lemon juice. And it's not fatal if you omit it.

Até hoje não acertei as suas receitas, já fiz várias mas, não dão certas rsrsrrs Pode ser a qualidade dos ingredientes. Aqui no Brasil é difícil encontrar qualidade nas farinhas e psyllium. Por favor, indique a loja que vc compra. Agradeço.

It's true that bread made with sunflower seed meal is a lot softer. I tried your recipe and was a big success that everyone loved it. Can I ask why HOT water?

Try using bran fibre that's comes from wheat and grind it very well, that should work without adding carbs

Yes salt is already added in the recipe for flavor. You can add sweetener but the bread may not crisp up after toasting. Keto friendly sweeteners does not have a compound for browning baked goods that is similar to what sugar does. But if you do not mind it, feel free to add the sweetener

I have a question, I’m using everything organic and the dough color is the same as yours but at the end when I took it out of oven it’s not the same height as yours and the color of my bread is getting a bit darker! Did you use psyllium husks or powder? Certain psyllium husk can make the bread to turn purple so you need to change to a different brand

@@lowcarbrecipeideas Hi, yes I used Psyllium husk , the dough color before putting it in the oven is the same as yours but after getting into oven and taking it out the color is darker!

It could be due to the psyllium husks. Certain brands can cause bread to turn purple or dark. Try to change to another brand.

The result will be different and the baking soda taste is unpleasant. I suggest you use baking powder.

I just put the dough into the oven with baking soda but I used 1/4 of the amount of baking powder from your recipe… fingers crossed! I’ve tried the almond keto bread recipe & it turned out great! So moist even after a week in the fridge & crisp when toasted!

@@lowcarbrecipeideas Hi Elsie, the bread turned out great… no overpowering taste of baking soda… maybe because I used a good quality brand. I should try baking with baking powder and see if there’s a difference! Your recipes and instructions are so easy to follow, I no longer need to spend a bomb on keto bread sold outside!

Nivine Michel You don't really need to cook a particular food like bread 🍞 or baked goods with flax in it anyway because, it becomes rancid and loses it's nutritional properties and health benefits when it's in heat for too long ♨.....🚫.

Is it too late to reply? Psyllium husk comes from the plant, Plantain. A weed, not a banana. Each plant has a flower and several leaves, and each flower is actually a group of little flowers, with the little husks called psyllium husk. Anyway, it grows wild in the Summer and Fall. I find it all over, when I don't mow.
