The Hinsdale is a drink we created for our Greek-Australian summer kitchen residents, esti.
The Hinsdale is a Grecian spin on the popular prohibition-era classic, the Last Word. Designed to be paired with esti’s Greek-inspired charcoal-cooked dishes, The Hinsdale, like the food, is herbal, complex, surprising and ultimately satisfying.
This moreish equal parts sour is as simple to make as it is delicious. The Hinsdale replaces the Last Word’s gin with dry, floral mastiha, a traditional Greek spirit made from the resin of the mastic tree. Axia mastiha is extra dry with subtle notes of rose and bergamot which complement the drink’s herbal Chartreuse and sweet, fruit-forward maraschino liqueur, maintaining the depth of the original whilst creating a distinct new flavour profile.
INGREDIENTS:
🍾 25ml Axia Mastiha
🌿 25ml Green Chartreuse
🍷 25ml Maraschino Liqueur
🍈 25ml Lime Juice
🍒 Maraschino Cherry for Garnish
EQUIPMENT:
-Jigger/Measure
-Shaker
-Hawthorn Strainer
-Fine Mesh Strainer
-Elbow Press
METHOD:
1) Chill a martini glass or coupe in the freezer or by filling with ice
2) Using your jigger to measure, add all the ingredients to the shaker
3) Fill shaker with cubed ice and seal
4) Shake vigorously for 10-15 seconds
5) Remove your glass from the freezer or empty of ice
6) Using your Hawthorn and fine mesh strainers, double strain into your chilled martini glass or coupe
7) Garnish with a maraschino cherry
8) Serve and enjoy!

Designed to be paired with the charcoal cooked food of our Greek-Australian summer kitchen residents, esti, The Hinsdale is herbaceous, complex and citrusy with a delicate balance of satisfying sweetness.
This simple spin on the equal parts sour, the Last Word, replaces the original’s gin with Axia mastiha. Mastiha is a Greek spirit made from the resin of the mastic tree, which grows on the Greek island of Chios. Axia’s mastiha is extra dry with notes of bergamot and rose making it a perfect equivalent for dry floral gin but with its own distinctly Mediterranean flavour.
