Bitter leaf soup is a tasty and rich Nigeria soup commonly prepared by the eastern part of Nigeria.
Bitter leaf soup is never complete without ogiri( local seasoning) . The igbo tribe in Nigeria refer this soup as Ofe onugbu and other tribes have their own unique name as well.
Cocoyam is a special ingredient when making bitter leaf soup, it serves as a very good thickener for this soup and not just that, but adds volume and earthly aroma to the soup. However, other thickeners such as; Achi, ofor, ukpor and egusi can be used to thicken onugbu soup.
Bitter leaf soup can be paired with any staple food such as fufu, pounded yam etc

Pls I've a question, a situation where I over do the cocoyam the solution out is to add more water right? and secondly I saw a video earlier where someone mad bitterleaf soup too and she started by adding water and a little time adding her cocoyam allowing it to dissolve,, is that process cool too?

Yes. Otherwise it would be ofe Umuahia/Owere 2.0. You can use oats as a thickening substitute but don’t even think about using achi.
