I worked at Taco Bell when the meximelt was on the menu. We used a steam box to melt the cheese. Wrapping them in a wet paper towel is genius to copy that process. We used a three cheese blend that is callled Mexican blend at the grocery store but he already said that I'm just saying it to verify authenticity.

I like the idea for lunch/dinner ideas for work. I work long days. Usually have to bring all 3 meals. Dialysis CHT. Always looking for new ways to microwave my food. Not a lot of time to eat. Could I make several up, freeze and take out maybe night before and then microwave?

@AllWingsEverything yes some come in a jar already cut with the juices, and some come in the produce section where you would have to chopped them yourself. It looks like you had the ones from the produce section, I wasn't sure, so I had to ask. Thanks ❤️ 😊 I'll be definitely trying these recipes for my Mexican hotdogs. I'll use the ingredients for hotdogs toppings. BTW, my first day of business was March the 15th, and I did very well. Thank you, and if you can remember, keep in a prayer 🙏🏽 and I'll do the same.
