Idk if you're interested in my input, but I saw Harumi asked what the name of the tempura mixture would be in English. I'm a native English speaker and love to cook. A liquid mixture (thin enough to pour) that we put on something we are deep frying is "batter" so we would call it "tempura batter." It's the same word we would also use for the mixture we bake for something like cake or muffins. If you called it "clothing" I would understand what you mean, but I admit it would sound a bit funny since "clothing" to an English speaker always means something you put on your body to cover up (shirt, dress, coat, etc.) unless we're speaking metaphorically like in a poem or riddle. I hope you find that helpful. I'm not trying to be rude, I just thought maybe it would be an interesting piece of information. I understand English can be an odd language and I admire people who do so well with it when their native language works very differently. I want to learn Japanese so I'll have a big job too for similar reasons. I love your videos. Arigato gozaimasu!

Of course, dipping something in batter will coat it, which is a fun homonym with the kind of clothing people wear as an outer garment in cold weather. So, there is a coincidental connection to clothing.

@@tommeyer9391 probably more that coincidental as words in languages often have different semantic extents. So in the US we might say batter, but in Japan perhaps the word for 'to cover' can both be used for clothing and battering a food. One example in Japanese is practice. In the west its okay to say you're practicing your job in your interaction with customers. In Japan it may get you scolded to say such a thing because practice is what you do before doing it. You never practice with a real customer. You'd say something like "I will do my best" with the implication you might fail.

@@DanielJoyce I've also heard snobby chefs use the term "enrobe" when describing dipping something to coat it (if I recall correctly, it was enrobing a strawberry in chocolate). So, there's several examples of such words having a fundamental root meaning--to cover something--and being used as both a noun and a verb that mean the same thing. Fun with English!

This is almost the same tempura recipe that I made when cooking at a Japanese restaurant. We did use potato starch, but just added 1 egg to the full bowl of batter to make it a little sticky. Also we dribbled some batter on top of the items in the oil to add crunch. The 1 drop of batter rising immediately is completely accurate for testing the temperature.

I enjoyed her presentation and I really like her and you throwing in Japanese words for those of us that are starting to learn. Please keep doing this new format as part of your videos too. If I get lucky, I will get to wave to Shogo, when I am in Kyoto walking around this August. Brilliant new format and Sea Bream is on my shopping list for next weekend.

Cool video but you really should have explained how it is supposed to have killed Tokugawa. According to Wikipedia’s entry on Tokugawa “The cause of death is thought to have been cancer or syphilis”…So the tempura story is most likely an urban legend of sorts, maybe?

Another page I found (you can find it too if you Google 'Tokugawa sea bream' - KZfaq isn't kind to links) says that he was believed to have died from food poisoning from eating bad sea bream tempura, but they explain it and give a timeline of when he ate the bream and when he died, showing that too much time had passed for his cause of death to have been food poisoning. So you're right - urban legend!

Love the idea since I am a history-student myself. I actually know only 1 other channel who does this. Tasting history. But he is mostly focused on western history, so I am really excited what Harumi will cook!

Harumi you did a great job! My only tiny criticism would be to tell your viewers what type of flour or starch you used to create the tempura mixture. Other than that fantastic job and I'm glad Harumi wasn't affected by the strong taste of the uma natto.

People really do underestimate simple recipes. You don't have to worry if you have go out of your way to get the ingredients (can be made on a budget, for example), it could be quickly prepared, and it could be made indoors or outdoors (backyard or going camping, for example). The hama-natto would also be useful on-the-go, easily stored away. I'm sure that eating it would be an acquired taste. Maybe it could be cut into smaller pieces so it wouldn't hit so hard on the tastebuds? For Tokugawa Ieyasu, I can see him being able to enjoy these at home and when he'd go on his military campaigns.

Yes! Finally! This is the video series I have been the most excited about since they were announced. I love learning all the things I can about Japan, but as food is one of my passions, it is my favorite to learn about!! I'm not sure what Hama-Natto actually is but it looks like Pistachio nuts to me with some kind of seasoning on them (I like to eat them when I drink alcohol so to me it makes sense that's what they would be.) I really wish we had a different metric for "life expectancy", something like "average adult age of death" would probably fix those numbers

I'm with Harumi don't like regular natto. Next time you might want to tell the audience not to overload the pot that you're frying in. Because the temperature will drop and you will get soggy tempura or Katsu. Whenever I make tempura or Katsu if the flash is a little too much iced I will use a paper towel or clean kitchen towel to remove the excess moisture so not too much flour gets onto the flesh before going into the batter. I also like to use a digital frying thermometer to keep tabs on the temperature of the frying oil. 3 months ago I made oyako katsudon for my girlfriend. She was completely amazed. I use chicken katsu made from leg and thigh meat. I'm looking forward to see your version of oyako Don.

Sounds like hama natto is the Japanese equivalent of Marmite or Vegemite, capable of instantly dividing people into like/don't like camps. I never deep fry, only bake items like breaded fish. I too have found that simpler is better. To me, adding flavor is best done with a dipping sauce, a perfect use for the hama natto.
