Hello, here's the ingredients along with the steps to make the Sudanese drink Abreh
Thanks to Madeha Shiboo for the recipe!
ingredients:
- millets
- dried hibiscus leaves
- dates
- ground tamarind
- ground galangal
- ground cardamom
- ground cinnamon
- ground cumin
- ground coriander
- ground fenugreek
- ground black seeds
Steps to make the Abreh:
1) in a bowl, add two cups of millets and two cups of water, mix it and leave it overnight.
2) put it through a strainer, add the mix in a blender and progressively add its water and blend it so the texture isn't liquid. split the mixture in two separate bowls. Boil one half until it thickens.
3) add seedless dates in a bowl of water and let it rest for two hours and then blend it. in another bowl, add tamarind with water and let it rest for two hours. blend the tamarind and put it through a strainer to get rid of the seeds. mix the blended dates and tamarind together and put it in a pot,. let it simmer while mixing. let it cool.
4) in the bowl that has the mixture from step 2, mix the cooked one and uncooked one together and add the blended tamarind and dates to it while mixing it. add one spoonful of the following spices: ground tamarind, ground galangal, ground cardamom, ground cinnamon, ground cumin, ground coriander, ground black seeds and half a spoon of ground fenugreek and mix it well. cover it and make sure that it's fully covered so no air comes inside. If you live in a cold climate, let it rest for 4 days. if you live in a hot climate, let it rest for one day.
5) add some hibiscus leaves in a bowl with water and let it rest for one day.
6) after letting the mix in step 5 sit for four days, add part of the hibiscus water in it and mix it well. let it rest again for half an hour.
7) in a hot pan, add a little bit of oil to it and add the mixture as if it was pancakes and mix it with a silicone spatula to spread evenly. once you are done with all the mix, you need to let it dry. you can heat up your oven, close it and put it inside a baking pan until it's dry or put it next to a heating source.
8) in a juice jug, add water and the dried mix until the color changes, you can add more hibiscus leaves if you want it to be darker. filter it through a strainer, add sugar to your liking with ice and enjoy!
