About the only change id make would be the tenderizer. I dont mind chewyer jerky, but then i grew up with kangaroo meat and that can be like chewing your truck tyre at times lol. Try this with Dark soy instead of the usual light. It has a bit different flavour that i actually prefer.

Made this in my dehydrator today. First time Ive ever made jerky of any kind. I only did 1 tsp of salt because I cant do a lot of salt and I did 2 tsp of pepper. My god this was absolutely amazing. Probably the best beef jerky Ive had in my life and I have had a lot. Great great texture and flavor. Getting the stir fry meat was a great tip. Its going to be a while before I even think of trying another recipe because this one is so darn good.

I Just did this kinda, 1/4 cup soy Sauce, just a hair under 1/4 cup Teriyaki Sauce, I did not have brown sugar so i used table spoon honey, for my dry stuff I used 6 table spoons of Pappy's seasoning ( salt. spice, sugar, paprika, granulated garlic, and granulated onion) put 2 lb London Broil in ziplock bag added the mixture (easy to mix everything) put in fridge. Here is hopping it turns out good!!

Nothing beats homemade jerky! I have tried all kinds of store bought jerkies and I have yet to like one of them. I make homemade jerky and I use my dad's recipe which he called Black Dung Jerky because it was so dark, but it's the best tasting jerky I've ever had! It has soy sauce, Worcestershire sauce (HAS to be Lea & Perrins), black pepper, fresh minced garlic, salt and if you like it spicy, some crushed red pepper. It is delish! He used to get so mad at me because I couldn't stop eating it. He tell me it's not a meal. To me it is!

A healthy substitute for the meat tenderizer and the soy sauce: vinegar tenderizes meat and liquid aminos are a sub for soy sauce. Looking forward to making this with my new dehydrator. Thanks, Van!

I've never finished my Jerky in an oven. I go 7-8 hours in a Dehydrator. Best way!!

I think it might depend on how hot your dehydrator gets. It looks like his only went to 160 so perhaps he is trying to finish it off in the oven to reach the 165 degrees that is safe temperature for cooked meats. That's the only reason I can think of.

Using a good quality ham base ,soy sauce, liquid smoke, garlic powder, lemon pepper, ground black pepper, brown sugar and a touch of sea salt.... priceless and much better.... it's taken 30 years to perfect it and never a complaint. (The ingredients are mixed in spring water for the full coverage of meat.)

Great recipe, I started out with a similar recipe first time I made jerky . It was very good. I made a few changes. Now I use this recipe, and it's the bomb. It smells so good I'm tempted to eat the meat raw before I can get into the dehydrator. 😂 Per 4lbs meat 1c dark brown sugar 1c low-sod soy sauce 3 Tbsp worcestershire sauce 2 Tbsp liquid smoke 1/3c balsamic vinegar 1/4c fresh orange juice 1/4c fresh grapefruit juice 1 Tbsp smoked paprika 1 Tbsp Carolina Reaper powder 1 Tbsp red pepper flakes 1 Tsp meat tenderizer 1 Tsp cumin powder 1 Tbsp ground black pepper 1 Tbsp onion powder 1 Tbsp garlic powder

I made this today and only marinated it for 4 hours. I kicked it up a notch by using a lot a black pepper. After dehydrating it for 4 hours I made a simple glaze before I placed it in the oven. Glaze consisted of Sugar Free G. Hughes Hickory BBQ sauce, more black pepper and some chicken stock to thin it out. Brushed it on placed it in the oven for 15 minutes and man oh man what a treat! Thanks for this recipe!

Now that LAST step, putting it in the oven at 275 for 10 to 15, that blew my MIND. I never considered doing that. Looks like it dries that last bit out real nicely. I'll give that a go on my next batch. Great video brother

First, thank you for making this video. I just learned I am such a novice at making beef jerky. Learning is cool. Two questions.... 1. What is your technique for knowing when to pull the meat from the dehydrator? 2. What is the purpose of finishing off with the 275 in the oven for a short stint?

This weekend I made my first ever jerky batch using this recipe. Followed it to a T. Tried some out of the dehydrator and it was gross. Tried it again after it cooled off from the oven. Still gross. I thought I'd done something wrong and ruined the entire batch... The next day I tried it out of the fridge and it was truly the best beef jerky I had ever tasted. I brought some to work to share. Everyone agreed the best beef jerky ever. Is that common or did something magical happen to it overnight in my refrigerator? 🤣🤣🤣. Thanks for sharing the video. You turned me into a jerky pro literally overnight.

Hey man, our recipe is for 6 lbs of jerky eye of round, One bottle soy sauce. One small bottle Worcestershire sauce, one bottle liquid smoke, then 3 tablespoons garlic powder, 3 tablespoons onion powder, 2 tablespoons Montreal steak spice, and add cayenne pepper for heat if you like it hot. Mix ingredients together and add the strips 1/4” into large ziplock freezer bags. Marinade for 48 hours, lay strips into dehydrator and dry for approximately 7 hours. Time can vary depending on thickness of meat.

I do the oven part first, something I picked up long ago. Heat the meat to 140, doesn’t take long, supposed to kill bacteria. Then into the dehydrator. I love trying different recipes too. And if I can’t get round, I use London broil, a little more $ but nice and lean. I’ll be trying this one next.

London Broil is a thick cut of top round. So it's still round. I buy the cheapest cats I can find and Winco sells sliced bottom round for $2.98/lb occasionally. In fact, that's the price right now! Go STOCK UP.

I've seen studies which say the jerky turns out better if you put it in a 200 degree oven for 5-7 minutes after dehydrating to make sure it reaches a safe temp of 165 degrees.

I first made this recipe about a month ago, i did it purely in my dehydrator and skipped the final oven dry. This recipe is the BEST jerky recipe ive ever tried. Perfect balance of everything. Not overly sweet or salty! I was worried about how much liquid smoke went in but it turns out absolutely perfect. I have a new batch marinating in the fridge as i type this!

This is the same thing I use X3 as I make bigger batches. I like to add hot chili powder for a spicier jerky. It is fun to make changes to each batch for some different jerky each time. This is a great base to start from.

I am making Korean Beef Jerky today. It’s a sweet, smoky, nutty flavor. Amazing recipe. It will be my video for this Thursday 😁👍 I hope you have a great weekend

My Son just got a dehydrater in the post yesterday,,,, and he tested it out with fruit last night, I've always wanted a dehydrater for trying beef jerky,, so now he has one, I can't wait to try it when we get the ingredients,, I like my jerky spicy, not too spicy, but with a little kick !!!! That’s awesome about your son. I started making jerky when I was probably 10 yrs old with a ronco food dehydrator. It literally took a day and a half haha. But that led me to making a lot of money on the side selling small batch jerky. I sold my business in 2016. Good luck with the recipe. I know it will turn out great for you 👍😁

@@VansWorld I never even knew what biltong was, untill a few years ago when my son took us to a shop in Cork city, all Australian foods and one was biltong we tryed it after a little while of going back home,, similar to jerky but not the same taste,, I did however try to make a tester batch a small batch of ground beef jerky,, yes it had a good kick to it!!!!! It was brittle though, but we were not going to waste it, just because it dident go bendy!!! My son loved it and so did I and my husband,,,,,, my other son wasn't going to try it,,, he's not in to those type of foods or snacks!!! All that was added to the ground beef was white pepper garlic power ginger power veg boulion paste paprika and a level tsp of powered chilli, that's it, it was so tasty, and had dried out ok, I want to try the beef strips next time!!!! Use a glass jar with a lid. I save all my empty condiment or pasta sauce jars.

Super good. Everyone loves it. And for liquid smoke family likes a 50/50 mix of mesquite and pecan. I am now playing around with the recipe and making it a little hotter for me with pepper flakes. With it being so cold outside/snow we can't use the smoker. This makes for a awesome inside jerky. Thank you

I’m 16 and deciding if I wish to start selling it locally today I’ll be making my first batch of 14 pounds of meat which will cut down to around 7 pounds of jerky hopefully this hell fire jerky comes out great

I found a very similar recipe, if not the same, last time I made jerky in my dehydrator. On one tray, after I laid out the strips, I added some shakes of oregano and more pepper on top. At first I didn't know if I liked the taste but my kids did. I now add it to all oregano of my batches.

Excellent recipe! I tried this for the first time in my new dehydrator it was simply delicious! as for the salt I did not use 2tsp rather 1tsp & 1/2 and the final process of sticking it in the oven I chose not to, I actually like alittle grease on there and let them sit in the dehydrator in-plugged an additional 3hrs before taking them out. Best recipe ever!

You're right that ending in the oven isn't necessary all the meat needs is to remain at 160 during the drying. I add jalapeno powder to the mix and dust with black pepper while it's still wet on the trays.

@@3ormorecharacterstimes2 The extra step in hot oven is just for safety. That quick hot few mins just to be sure any bacteria that may be present Are killed. I often use my home made Biltong drying box that runs mostly airflow rather than heat, instead of my smaller store bought dehydrator. Just warm but dried over 5-6-7 or more days . Ive never had an issue, but if its made for others, I always run it through the oven after drying. Just to be safe. If you havnt tried traditional Biltong, check it out. One of those flavours that just hit right, and I cant keep up with my grandkids chomping through it lol.

@@colb9916 Why not simply tweak it in the dehydrator at 165? Or even, start out preheating the dehydrator at 165 and then put the jerky trays in like that for 20 - 30 mins and then reduce the temp to around 145? Or maybe, how about doing the jerky at 165 for 4 or 5 hrs., depending on the thickness of the strips?

@@KickButtMarketing My biltong box isnt temp adjustable. It only runs just warm with fans to create gentle airflow. Dried over 5-6 days rather than hours. Cuts of marinated meat start out about 1/2-1 in, by 3-4 in, by 6-7 inch. Basically the size of a NY strip or Sirloin steak. Being traditionally a South African style of preserving meat, it has Quite a bit different flavour, methods and end product to traditional jerky. (Worcestershire sauce, malt vinegar , 1/4 of your spice mix, to cure a couple hrs, then rub on the other 3/4 of spices. toasted, crushed coriander, black pepper, salt, a little chili if you like, then hang to dry ) Well worth a look if you've never tried it. If I'm making jerky, I use the dehydrator with much higher temps, less drying time & much smaller pieces. 65-75 celcius over 5-6 hrs.

Ok hear me out, follow this exact recipe but use cubed stew meat instead. About 1.5 pounds of it. They come out like tender jerky nuggets!!! So good!!

Tried this a few weeks ago without the liquid smoke as I couldn't find it in stores.. Simple to say it was great! I've got another batch sitting in the fridge with the liquid smoke this time and am equally excited to try it!

try your local butcher shop or ordering online, places like walmart or grocery stores usually won’t have it. a butcher shop or anywhere that sells BBQ/smoker stuff would probably have it though

Vac chambers work great. Realy drives the flavours deep. I often vac bag batches and leave in the fridge a couple days. Aint no getting around the flavour then lol.

Basicly what you made was teryaki sauce. I marinade mine in teryaki and sprinkle a little seasoning on before I put it in the dehydrator.

Syrup is a great addition to the recipe. Try molasses some time. It adds a great flavor to the jerky and it will make the jerky tender too.

This is a good start for a basic jerky, I added jalapeno powder and dusted with black pepper before putting in dehydrator to actually make it the world's best beef jerky. :-)

after all the jerky influence, I've decided to get 2 eye of round and 2 rump roast, anywhere to 8 lbs after the fat is taken away. Also bought Hickory season and Teriyaki season and cure. About to bring out the Meat slicer. Makes it a lot easier to make your slices. I'm going to marinade the meat for over night so the flavor will penetrate into the meats. I've already have 2 dehydrators ready to go. I will fill the two dehydrators and dehydrate for four hours with half of the meats and then dehydrate the rest after that. Can't wait to eat the jerky faster than it takes to make it. LOL

Hey Van, this is Aaron from down under (Australia), thanks for sharing your recipe for the best beef jerky. I looked up the best beef jerky recipe for a dehydrator and your video came up. Seeing you enjoying your beef jerky at the end of the video made me want to make it more 😄😆😄, I Made up your recipe minus the liquid smoke and the meat tenderiser. I’m hoping that it wont affect the recipe too much and I have only just put it in the marinade to leave until I get home from work. I’m looking forward to putting it into the dehydrator to get the finished product. Thanks again for sharing and I’m hoping that leaving out those too ingredients wont affect it too much.

I made one adjustment to your recipe with the praprika, I put in half the recommended amount because as Australians we don’t like things as hot as the Americans. It was all finished yesterday morning, I broke it up into small sizes and took a sample pack with me to work. I shared it with a chef friend of mine and she liked it. She even gave me one of the missing ingredients for next time I made it. Van, I started munching on the jerky and I couldn’t stop. I kept eating that beef jerky delight all day. When I ran out I went to my car and grabbed the rest of it and broke it all up into bit sized pieces and continued eating it. I was even eating it still while I was making dinner last night. Van I want to thank you for a truly enjoyable day yesterday eating the formula that you shared was a delight. I’m looking forward to making another batch and adding in the smoky stuff. If I have time I might drop into the stor and see if I can get the meat tenderiser stuff as well. Van thank you for sharing, the beef jerky was truly a delight. Just talking about it is making me want to have some more! 👍😄👍

You sound like me lol. When I take it to work, I can’t stop eating it. It’s a fun thing to make and making small batches allows you to try more flavors and recipes. I made some last night but accidentally grab a tsp instead of a tbsp so I only got 2 tsp of liquid smoke, worcestershire, and brown sugar but it's still some of the best jerky I've had. Now I used Milanesa cut and only let the meat marinate for 30 minutes but oh my it's delicious

Hey van just got done making this I just tried a piece from the dehydrator and was good I didn’t have everything in the video so for liquid smoke I used maple bacon steak seasoning and 4 tbs of brown sugar tastes almost like a store bought teriyaki type jerky but has a little hint of regular store bought jerky from butchers from grande prairie Alberta Canada

In our recipe, we start with a cup of Coca-Cola or Dr. Pepper. Then the Soy and Worcestishire sauces and dry ingredients. The colas or soft drinks have the required moisture plus all kinds of spices and seasonings. Try it.

Always a solid go-to recipe for friends that don’t know what they like. Personally I double the liquid smoke, take out the brown sugar and add in 2 tbsps of honey. I’m just jealous you have a butcher to slice it thin. I’m good with my knife, but a little inconsistent after a few brews

you need to try high mountain seasoning for jerky. it is a dry mix and works great. perfect for beef or deer

You can make it with just salt and pepper. I’m not sure how you can get a consistent flavor without a marinade though.

Why do you have to bake it I mean it seems if you have it in the dehydrator for a long time it would be pretty much done? I recently ordered me a dehydrator and I want to try to make jerky from chicken and other things.

try mine. Same recipe as yours but instead if the brown sugar use Bolners fiesta brand mango habanero spice. And dont use any of the dry spices you used except for the meat tenderizer
