INGREDIENTS LIST 📝
1️⃣
Kimchi Carbonara
Ingredients
Kimchi Alfredo
- 150g silken tofu
- 4 tbsp vegan kimchi
- 1 cup plant milk
- 150-200g tofu
- 1/2 cup pasta water
- 2 tbsp vegan grated cheese
Spices
- 1 tsp (each): salt, garlic powder, dried oregano
- 1/2 tsp paprika
- 2 tsp nutritional yeast
“Meat”
- 150-200g firm tofu
- 50-100g oyster mushrooms
Marinade
- 3 tbsp tamari
- 1 tbsp (each): teriyaki, sriracha
- 1/2 tbsp sesame oil
- 1 tbsp olive oil
2️⃣
Beet, Tofu, and Basil Patties
(20-25 medium-sized patties)
Ingredients
- 450g firm tofu
- Cooked beets (small, 500g after draining)
- Handful of basil
- 3 tbsp chickpea flour
- 1 tsp (each) - salt, yeast powder, dried basil, dried oregano
- 1/2 teaspoon (each) - organic soup powder, garlic, “ras el hanout”
- Pepper by taste
Beet “Pink” sauce
- 50ml beet juice
- 60g cooked beets
- Mint (5-6 big leaves)
- Green onions (1-2)
- 6 tbsp lemon juice
- 1/2 tsp salt
- 6 tbsp white beans
- 3-4 tsp tahini
- Black pepper
- 1/2 tbsp sriracha
3️⃣
Tofu Bolognese (ground beef tofu)
Ingredients
- 400g firm tofu
- 1.5 cups cooked brown lentils (1 cup dry, before cooking)
- 1/2 cup wallnuts
- 2 small celery stalks
- 1 pealed carrot
- 200g champion mushrooms (optional)
- 1200-1400g tomato sauce
- 3-4 tbsp balsamic vinegar
- 2-4 tbsp tomato paste
- Fresh Basil leaves
- 1/2-1 cup pasta cooking water
Spices
- 1.5 tsp Paprika
- 2 tsp (each): Salt, dried Oregano, dried Thyme
- 1 (each): Ras El-hanout, Garlic powder
- 2 tbsp Nutritional yeast
Others
- pasta: spaghetti / fettuccine / fusilli, any type will do actually!
- Vegan parmesan
