You will Need
16 -18 Raw Prawns
1 litre Water
About an Inch of Galangal
2 sticks of Lemon Grass
3-6 Red and Green Chillies
4 Shallots
3 or 4 Kaffir Lime Leaves
100g Oyster Mushrooms
A good Bunch of Coriander
1 tablespoon of Fish Sauce
Juice of 1-2 Limes

Steve's Kitchen I fly out Tuesday and Playlist starts on Friday. I've probably packed more for this short trip than you packed for you long trip. I need to learn to pack lighter. Lol.

how would you go on if you couldn't get kafir lime leaves as we can't in this country. Any ideas of a decent sub. By the way i love your vids.

I am going to suggest Lemon Thyme or Bay Leaf and Lemon Zest, it will impart some of the flavours but not exactly, I hope ti works for you, let me know. OK. I was with you until you left the heads on the prawns. I'm such a typical American! That stock looks amazing, though, I'm thinking a trip to the Asian market is in my immediate future!
