Ingredients:
- 400g big udon noodles
- 2 cups water
- 1 tbsp soy sauce
- 3 tbsp sesame oil
- 2 Garlic
- 1-inch piece of ginger, grated
- 1 cup sliced vegetables (such as red, yellow & green bell peppers)
- 2 Onions, sliced
- Optional toppings: Pepper flakes or onions
Instructions:
1. Bring water to a boil in a large pot. Add the udon noodles, usually 8-10 minutes, until tender. Drain and rinse the noodles under cold water to stop the cooking process. Set aside.
2. Mix soy sauce and oyster sauce in a small bowl. Set aside.
3. heat a bit of oil over medium heat in a large skillet or wok. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
4. Add sliced vegetables to the skillet and stir-fry for 3-4 minutes until they are just tender but still crisp.
5. Add the cooked udon noodles to the skillet along with the soy sauce and oyster sauce mixture. Toss everything together until the noodles are well coated and heated through about 2-3 minutes.
6. Remove the skillet from heat and sprinkle sliced green onions on top( optional ). Serve the delicious big udon noodles hot, garnished with optional toppings.
