Dear People, Donald is making "Watermelon Rind *Candy".* Yes... *_Candy._* If you are complaining about the use of sugar, just don't eat candy. Natural candy uses sugar not only as a sweetener, but also as a desiccant for rinds and peels. Also, salt and sugar are natural preservatives, so they serve multiple purposes in this recipe. BTW, I enjoyed this video. I'd only seen watermelon rind pickled. This reminds me of the times when nothing was wasted.

Just made my first batch. After reading someone comment it was salty, I added one step. After rinsing from an overnight brine, I soaked them in water for about an hour. Poured that water out, and started fresh to boil them until translucent. One thing I struggled with was the wet rind going into the sugar, causing the sugar to liquify. They came out super sweet. I did a brief rinse, and it was more to my liking.

I started to let them sit on a wire rack until mostly dry---then into the sugar.

I made these for my grandkids and added flavor oils. the kids went crazy for the hot cinnamon and I love the lemon. We also like cherry, and watermelon flavor as well.

Even better so it isn't sour....put some of the koolaid in the hot sugar mixture at the end just before it's up to 240. The koolaid dissolves for better flavor😉

As a kid growing up in Lancaster County, PA, I used to eat chow-chow (a bunch of pickled veggies in a jar) that included pickled watermelon rind. It was always my favorite part. This sort of reminds me of that, only likely sweeter. I'm keen to try this!

For anyone making this for themselves, keep in the mind that a qtr cup of his salt is roughly 50g, a qtr cup of table salt, or mortons, is roughly 75g. Using a scale will mean close to exact measurements.

That's how they cook the rinds in the Philippines... except they don't coat it with granulated sugar, after boiling it in the sugar water they let it dry naturally in the sun (a dehydrator works well) until it is completely dry. The only way to describe it is, it's hard like kohakotu candy but when you bite into it it is soft.

That looks really good and it's a nice way to use almost all of a watermelon. I'm always for using the most out of everything, so I would put the green outer shell into the compost.

My grandmother made the exact same thing but she used, Lemon, Orange and Grapefruit skins. They tasted like the fruit but sweeter.

The sugar water will only ignite if it comes into contact with a flame. I've boiled sugar water all the way down to rock candy with no problem.

rofyle Actually to make caramel sauce you go beyond this point and let the sugar/water solution actually start to burn a bit to get the brown color. It's a tricky process because once it starts turning brown it's not long before it can go really dark and be burnt and ruined. Once it gets brown you quickly add the condensced milk and other ingredients.

Sugar water will never flash because of the water content. Only after the water has boiled off will the temperature rise at a sharp rate.

This is not how you make caramel sauce. And sugar water will not brown before the sugar turns to rock candy.

Not true. Boiling, condensed sugar water absolutely will flash, and flash huge if it comes into contact with open flame. You and Anthony need to actually try boiling sugar water before you say anything else.

Ok well if the water content isn't low enough the temperature will not rise to 364 degrees F for it to hit the flash point.

My mother's aunt Margret made these but without the final sugar coating. She also added other spices and put them in jars like sweet pickles.

I Put my candy in a mason jar. But have also sealed it in a vacuum sealed pouch. Not sure how long it lasts, because everyone eats it so fast.

From my limited attempts at making orange rind candies, it seemsi two important factors are the 240f cooking temp and low humidity. If the weather is wrong it will be gooey, still yummy, but not perfect.

Thanks ! These look fabulously interesting. I did something like this with Orange Peels-requires exact same method, but mine tasted bland like nothing:Until they sat in a jar for a few months,then they were delicious. I guess they needed to "cure" , or dry out some !

+truthgha if you love watermelon it makes a great salad, diced with mint, onion, and fetta chese, or almont slivers blanced in spiced oil and tossed in with wmelon and onion. ENJOY.

@@truthgha I am a garlic person, we have local supplier that has fantastic olive oil infused with garlice. or just press garlic yourself and use a good oil. the almonds are also great in a green bean salad, but you need to sit over night or 12 hour in jar tossing regularly... that is also yummy. We can get the oils with chilli, garlic and they are ok as not to spicy. if doing manually i would go this with green bean not watermelon as it can kill the taste of the mint, cheese and oinion.. Hope this makes sense , it is too early in morrning here, after a fairly warm day of 35c with dry gale winds, and then 5pm and dropped to 15c now it is 13 c but feels like 10, we have the wood heater going, and it is cold and miserable outside so brain is still catching up. :

Janina Simons thanks. I can see garlic and chilies with green beans. You mentioned garlic olive oil with watermelon? I can't see that one. It does sound like great combo for regular salad tho with feta, mint, onion and almond slivers. When you say blanching, are you saying use olive oil heated and add almond slivers with garlic . Sounds good. Will try.

You could leave the green rind on. Watermelon is the one rind where you can eat the whole rind. Looks good!

Watermelon rind boiled tastes like squash and is used that way in some parts of the world. So discarding the first water is a good idea. You make a blank fruit that way and you can add any flavor you want. I make jam from watermelon rind, and peach Kool-Aid or Jello added makes a wonderful jam.

Nice vid! I think I'd opt to flavor that sugar coating with some lime zest. Or maybe get the lime flavor by combining the zest into the syrup, similar to how lemoncello is made.

Watermelon and basil are good together. I think I'm going to dry some fresh basil and grind it fine, and coat the rinds with a sugar dried basil mixture.

I usually use the skin and wash my face and neck with it. Leave it on till it’s dried then rinse off or sometimes keeps it on all day

Couldn't you reserve the water you cooked the watermelon in for all the cooking steps to make a better product? Or even reserve it to make a nice simple syrup for cocktails or what have you?

Yeah all the vitamins in the rind went to the drain . We can save it for next day boiling process then let it dry out so that the vitamins stay within the rind.anyway the salt was washed out already Before the second boiling process.. the rind has more vitamins than the watermelon itself... so let us save it and get the most of the vitamins ....

We make this all the time in South Africa, only we add a few chunks of fresh ginger in there and serve it in the thick syrup. Sometimes it is crystallized. It is fantastic. We would never serve it in grainy sugar.
