With the international year of millets taking millets across borders , we thought its time to spread our wings and try different cuisines keeping millets as our base . Today’s recipe is one such dish combing the flavours of Mexican cuisine with the goodness of millets.
Presenting the MILLET BURRITO BOWL
The Simple authentic components brought together for this tasty bowl of goodness are
1. The base of millet cilantro / coriander rice
2.Fajita veggies using capsicum and onions
3. Corn and raw mango salad ( because Mexican food is Incomplete without corn )
4.Mexican black beans for the protein element of the bowl(which can be replaced with pinto beans or rajma )
5.Salsa (the heart of Mexican flavours )
6.Hung curd replacing sour cream
7.Guacamole
The beans and salsa can be made beforehand and stored for use in other Mexican dishes as well

Mam, most of the time the millets we get is not fully de-husked (many grains still has the husk) and it does not get cooked. Also it'll have tiny stone particles which practically cannot be sorted manually. How to deal with these 2 issues? Can you suggest a source from where we can buy fully de-husked and clean millets
