Double Pie Crust recipe 1/3 C Shortening or Lard 1/3 C Butter 2 C Flour Pinch of salt if using unsalted butter ~1/2 C ice cold water Freeze lard and butter ahead of time. Put flour and salt in a bowl. Grate the fats into the flour. Make a well in the center and add water. Gently combine, adding more water if dough still crumbles apart, but not too much where the dough sticks to your hands. Refrigerate for at least 30 minutes. Makes 2 9-inch pan crusts.

Every dinner I am making lately has been inspired by you!! Last night was homemade pizza using your recipe (and the dough was delicious!) Tonight is pot pies using this recipe. Thank you SO much for always sharing your wisdom with us. Praying for you and the children for a speedy physical healing. And praying God will continue to have his hand on all of you during this time.

So glad I found this video. I can make wedding cakes, but I can’t make a pie crust. So many gals use a food processor to make them. I hate using that thing, seeing you actually using your hands was so helpful. I grate my butter when I make biscuits so I familiar with that. And I always use salted butter, your recipe is easy to remember. Now I totally want to make a pie crust! Thanks Heather!

Just wanted to share a tip I'm in Australia and its summer here atm with the temperatures to match, I dont have air con but have found mixing dough in a glass mixing bowl that has been put in the freezer for 5-10 minutes really does help in keeping dough cool while working it.

A side bowl of flour works well for dipping your frozen shortening/butter into as you're grating. I love Bev's method too ETA I also use the useless plastic rice paddle from my rice cooker to toss the flour/fat mixture when adding the ice water so it doesn't get warmed up...the shape of it is perfect and I use the same basic motion you do but just use the rice paddle in place of my hot little hand.

At my Meijers lard is kept where the sausage cooler is. One trick mom used to use in making pie crust is cutting the Crisco and butter into 1 cup of flour then freezing it for about an hour or overnight in the fridge. Water had to have ice cubes in it too.

My Grandmother made amazing pie crust. She tried to teach me but I do not have the patience she had. She did the same thing with the water and she would keep her Crisco and butter in the fridge until just before she was ready, she then used two butter knives that she also had in the fridge and "cut the butter into the flour" and never touched the dough with her hands until it was mixed and at the consistency she wanted to make her ball of dough. Great job though, maybe I'll try one more time if I can work up the nerve.

My momma preferred two knives over grating, before she passed all she ever used was the 2 knife method. Try it and see how long it takes you. She never froze her butter and shortening, but she dang sure did have it in the fridge. LOL Have you ever heard of Lefse? Man... I *love* it but it is a nightmare to make! 😵 It's my current "goal" in the kitchen right now. Haha! Make Lefse, by gosh, I *will* succeed at it!
