Note: I have been buying my modelling tools for many many years and in different countries, therefore, today I couldn't find the exact tools I used in this video. But following are equivalent ones:
- Modelling clay (wax based, non-hardening): amzn.to/2qOI40v
The above clay, like the one I used, is oil-based and it never hardens. If you would rather have your sculpture to harden, you may prefer to use something like the following:

Dear Leonardo, I was desperate for inspiration for a Christmas cake especially for my little two year old grandson who loves animals. I wanted to do a polar bear as a topping, sitting on ice (royal icing) - so your wonderful tutorial inspired and enabled me to make your fabulous polar bear in fondant icing. It's not quite the masterpiece yours is, but it is as good as I can get, and it is very recognisable as a polar bear. Thank you so much - I just didn't want a cartoon type creature atop my cake but a realistic one - your tutorial did the trick - I can't thank you enough. What a talent you have.

No, this stays soft forever! In order to keep the sculpture permanent, I will have to make a cast and make it in another material.
