How to Pick and Process Grapes to Make Wine

This week we harvest the grapes to make quality wine. Starting with net removal and the pick itself, we then process the fruit through a crusher/destemmer and inoculate the must to begin ferment. Nothing ever goes smoothly, and this certainly was the case this time, with vandalism resulting in loss of power and a fox damaging nets and letting birds in only days before harvest. Keeping a positive approach and sticking to the plan, we get the fruit harvested and the wine underway. Subscribe for a new video each week! New content uploaded every weekend.

I worked in a small vineyard just up the road from me here in Donnybrook, WA for quite a few vintages. I was the crusher loader as I'm tall and could reach that high. We used crates so 20+ kilos per crate and around 150 crates. Good work out. We used fermenter bags of 1000 litres. Picking was good fun with a few backpackers. Early start at daybreak to keep the grapes cool. Got warm around 10 and your water bottle was always at the other end of the row and thinking some nice cool grape juice was a thirst quencher wasn't true. Wine grapes are just too sweet. Did the whole lot from pruning to bottling. and drinking.

Great video Tim. After making my own wine with dad for many years it’s great to learn even more.....how many kg’s did you end up with???? keen to see what extra grapes you add... and plans to pest-proof, bird-proof and 🦊fox-proof next years crop.

Hi Tim, great video series so far. Are the foxes attracted to the ripened grapes or was it just an opportunistic feed? Also what types of spray are you using? And do you have a rough guide of vine metres to litres of juice?

Great vids Tim. Do you any SO2 during crushing? Seems most people recommend a dose delivered via potassium metabisulphite.

I’ve always made wine from juice. Last year I did grapes for the first time. Do you have to clean all the grapes first in case of insecticides. I washed 120 lbs last year which really sucked. I’m picking today. Hope to hear back great video

Nah mate. The grower should be following MRL protocol and there will be no residue to concern yourself with. Even if there is, washing wouldn’t get rid of it and will ruin wine quality.

Do you happen to know the variety and if these grapes were being grown on their own roots?

Cabernet SA125 on own roots, but would never advise that now due to phylloxera. At home I’ve got SA125 growing very nicely on Richter 110

Sorry, this is completely off topic, but how do you deal with capeweed without resorting to chemicals?

Tim Thompson I'm in full agreement, there are no weeds in nature but for the moment the only animals on the property are horses and the broad leafs are running amok. Have tried mowing at certain times to no avail. I have looked to solutions provided by NSF (Peter Andrews) but also to no avail so far.

Tim Thompson to clarify, there is one paddock that is not fenced therefore is not grazed upon at all. The problem is most prevalent there. Where the horses graze is better but there is still what appears to be an emerging problem. Anyway, all the best.
