Can you explain why the c7 has a b flat? I thought this was key of c?

This is a great question! So you are correct that naturally occurring in the key of C, a seventh chord built on the C chord would be a Cmaj7 (CEGB) rather than a C7 (C dominant 7 - CEGBb). There are a couple of things to clarify: There is no rule that a song needs to literally stick to a key/scale note-for-note. In fact, often times songs are more interesting to the listener if they "break the rules" and step outside of the key here and there. Dominant 7th chords have a cool, edgy sound to them. It is common, especially in blues music, to use a flat 7th on a chord that "should" be a major 7th, and is just part of the sound of the style. Finally I'd say...perhaps a better working definition for what it means to be "in the key of C" (or any other key) is not "this song uses only notes from the C major scale," but "this song is constructed in a way that the C chord feels like the home base, even if some notes of the song deviate from the C scale" Hope that makes sense!
