How to pour the perfect pint:
The first thing you need to know is the type of tap you are pouring from. There are two main types:
Freeflow
Compensator
Pouring the perfect pint with a free flow tap:
With a free flow tap start by pulling the handle all the way down towards you in one smooth motion. Angle the glass at 45 degrees and allow the beer to fill at a pace of around 10-15 seconds for a pint. If you fill too fast you will get fobbing and too slow means the customer is left waiting unnecessarily. As is starts to fill up you can slowly straighten the glass to an upright position. Bring the nozzle up out of the glass as it fills. Never allow the nozzle of the tap to dip into the beer- it’s unhygienic. Once you have almost finishing pouring the pint, if you feel you need a bit more head on the beer, push the handle of the tap away from you and this will create a nice amount of foam to finish the pint off.
Pouring the perfect pint with a compensator tap:
With the compensator tap the area of travel is much narrower compared to a free flow tap. 45 degrees instead of 90 degrees. Pull the tap fully, hold the glass at 45 degrees and aim for a 10-15 second pour. Again, the tap can be pushed away from you at the end if you need to top up the head.
Flow Control:
Use the adjuster value to control the flow and speed of the pint. This shouldn’t need playing with once you’ve got the beer pouring in the right amount of time and a good head formation.
To control the flow of beer on a free flow set up, look for the flow control under the bar. It will have directional arrows that indicate the rotation for open and closed. Open equals more flow or quicker, whereas closed equals less flow or slower. These aren’t designed to be messed around with all of the time. If you find yourself frequently having to make adjustments then speak to your cellar engineer.
