How I preinfuse on the Rocket Giotto Premium Plus espresso machine. This can be done on any machine with an e61 group head. Preinfusion improves the consistency of espresso and sometimes will allow you to grind finer and extract more.
This could mean juicier lungos and richer ristrettos.

I tried this on my M58 today after watching your video. On my machine the pump engages at 45 degree angle but flow is still off which prevents the line pressure/tank steam wetting drip. Clive has sent me instructions on how to adjust my pump switch back to keep the pump from kicking on this early but I am reluctant to go under the hood this early in my ownership. After watching your video, I now kick on to full 9 bar until I see droplets form on the bottomless, go down to 45 degree which completely cuts flow (though pump is still engaged) for 10 seconds, kick back up to full to get syrupy extraction, back to 45 as I approach my extraction grams target, fully down at target. Thank you so much for showing me how to use this! No longer worried about plumbing in and adjusting pump switch.

Never thought of trying to preinfuse that way on my R58. Recently i would pull the shot and around half way through I would push down the lever and its like ramping down the pressure, results in a more balanced shot. Will definitely try this method

Thanks! This helped me pull maybe the best shot i've ever pulled with my Izzo VIVI! Lever fully up till i saw anything starting to come from the bottomless. Then lever halfway at till 10-12 secs, then fully up for total time of 32sec. 17 gram in, 34 gram out. Super tasty!

I have a Giotto. Testing this feature using a naked portafilter shows exactly what position the level has to be in to provide the pre-infusion effect.

I have the same model Rocket Giotto (2009) running on a tank. I have been preinfusing with the lever half way but interesting to see that you recommend engaging the pump and then dropping the lever back - interested to get that a try!

I've also been looking at the Lelit Flow Control Kit recently which looks like it would also allow you to do full (water line pressure) controlled preinfusion. Looked at these before - what do you think?

Just checked out the Lelit, hadn’t heard of the kit before! When I’m feeling more adventurous I might try and get my hands on one. A group rebuild is probably in my future either way.

Just got my ecm today. I knew that it did pre infusion but could not get it to work. Turns out I wasn’t pulling the leaver up quite enough. Thanks for the help. Happy espresso-ing

Hello some e61 group dont have lower spring in the group shown in video drawings on 45 sec (only middle and upper springs). How does it affect preinfusion?

Cool video, thanks for the information. I also have a Giotto (and use the tank) and experimented with technique today on a couple shots. Two questions, you are moving to the "middle position" which allows water to still flow slowly out of the group correct? Because it looks like (in your video) the lever is disengaged from the trigger/button. Second question when you say you have these long extraction times, those times include the pre-infusion correct? Thanks again for sharing this technique!

Thank you! The time does include preinfusion. The button that is behind the lever, at least on my model, only engages the pump. The lever also mechanically pushes the top pin in the e61 to allow water to enter/flow through the group.

Hello! I believe only used, ACF was bought up a few years ago and I haven’t seen many around. I bought a set of black cappuccino cups around 2011 and my two red tulip cups were given to me a few years ago.

Sanity check David - I am looking to buy the same machine, and will only use bottled water tank fill because the available tap water here is hard and would scale. Apparently one difference between the vibratory and rotary pumps is the rotary pumps build pressure more quickly - the opposite of what you are working to achieve? From that it seems that I'm better off saving the price difference and getting the cheaper vibratory pump version and putting the savings into a grinder budget? I'm also curious to try the E61 Coffee Sensor Flow Control. Thanks for the videos and feedback!

Hi Ralph! More cash for a grinder might be the way to go. If you end up going with rotary pump you have the option to pull from your water line which would give you that line pressure preinfusion that I’m trying to emulate with this method. Without the water line, you’d still get a more durable pump in the rotary model and, maybe, more consistent pressure throughout each shot. I haven’t used many home machines with rotary pumps so can’t speak on that too much. Vibratory pumps last about 4-5 years in my experience and are inexpensive and relatively easy to replace yourself. @@DavidLikesCoffee Thanks sooo much for the reply because internet research is often misleading. The time is now to decide between Mozzafiato / Giotto vibratory or rotary pumped. At my mountain dream house the tap water is hard, so the most convenient use will be bottled jug water and avoid the plumbing job; otherwise I’d have to introduce a reverse osmosis filter. Your method to momentarily engage the pump is a variation on a more common technique described two minutes into KZfaq video HWpOVdryALk, to pre-wet using water driven by residual pressure in the brew boiler line. Learning from comments (KZfaq 2DPcZD48TxM) between sFu/Marc, the Rocket has a safety solenoid valve which is closed when the rotary pump is off that prevents plumbing line pressure pre-infusion. So there doesn’t seem to be a pre-infusion advantage in the Rocket models between vibratory and rotary. Except for a later comment by Engiadina, who added an override switch to open the solenoid valve for line pressure pre-infusion. Good for him, but of no use if I prefer bottled water. By momentarily engaging the pump, you have a simple and cleaver work-around. I guessed and ordered a rotary Mozzafiato; maybe more consistent extraction, and maybe a filtered hookup someday in place of bottled water.

After seeing this video, I tried your technique and I like the direction. But I must confess that I am having some problem dialing in. What sort of ratio do you get with a 30s and 50s shot when you feel the shots are dialed in? even grinding significantly finer (Sort of the grind setting that would just choke if I wasn't preinfusing like this), I was hitting 1:2 in 18~20s

Does preinfusion (mid way up) start the shot timer? Or when does the timer trigger on the Giotto?

I’ll always start the shot timer as soon as water starts flowing. Looks like the rocket modes with timers don’t start until the lever is all the way up, so I would count manually and add pre infusion time to total shot time or just ignore that timer and use my own.
