I catch steelhead, brown trout, and salmon from Lake Michigan. I usually use the roe for bait or pitch it. I am definitely trying this now! So awesome. I love the raw egg yolk with hot rice. Learned this from watching anime with my daughter.

I was skeptical of fresh hot rice with raw egg at first, but I ended up getting to enjoy it. Seeing you only choose to use the yolk makes it seem a lot more appetizing, my only problems I had with it was the egg white before. Your dish looked so good... Keep it up man

I use hot water to separate the roe from the sacs (on salmon. I’ve never done steelhead). Make sure the roe sacs are cold, like just out of the fridge, and put in a big bowl. Pour almost boiling water on them and agitate gently with a wooden spoon at first, the water quickly cools enough for you to put your hands in (still pretty hot though) and you can use your fingers to nudge the eggs out of all the little folds. The membrane kinda shrinks up and breaks into small bits that you can pour off. It takes a couple rounds of hot water, and a whole lot of rounds of rinsing in cold water, but it works well. The roe will go totally opaque and you’ll be afraid you fucked up, but when you stir salt in and watch it get beautiful and translucent again it’s pretty magical. I’ve never tried the marinade you used (only ever salted and added a splash of sake or vodka), that looked delicious! Good tip about freezing beforehand too.
@jocelynnguyen28123 жыл бұрын
The water is pretty hot! Not boiling or anything, but as hot as your bare hands can stand to be submerged. That’s why it’s important for the eggs to be cold, I refrigerate them before doing this. I’ve never had them cook (though that’s what you always worry about when you see them going opaque, but that’s just them in any water. They get translucent again as you add salt)

go to your local hardware store and buy gutter guard for eves. plastic and doesn't come in contact with anything metallic. tape it to a bow and grade it. we use this when we separate eggs from skeins for tying spawn for steelhead trips. Works for both salmon and steelhead roe.

I’ve eaten hundreds of raw eggs and never gotten sick. The chance of an uncracked egg containing salmonella is extraordinarily low. “Even with safety steps in place, it's estimated that about 1 in 20,000 to 1 in 10,000 eggs are contaminated with Salmonella” Some people are more scared than others but 1/10,000-1/20,000 odds of vomiting are cool w me

I'm going to give you an old Bosnian recipe. In 500ml water boil 5 cloves crushed garlic for 5-10 minutes. Strain the garlic and add 3 tsp salt, 1 tsp pepper, unsalted butter 2 tbsp of worcestershire sauce 3 tbsp of brown sugar and boil for another 10-15 minutes until sauce thickens a bit. Meanwhile get a nice sized pan and melt some butter and add 1 tbsp of extra virgin olive oil and add 1 smaller head of onion, garlic that you removed from water 2 carrots sliced into smaller pieces and after 2 minutes add 2-3 fresh pealed pureed tomatoes and salt and pepper as you like. Let it simmer for 20-30 minutes adding small amounts water to it so it doesn't burn and then in the end take the fish eggs roll them into some seasoned flour pour them into the pan and cook for another 3-4 minutes. Serve on the plate pour the sauce over it and then take the plate open your garbage can and throw it all in it and go eat a steak instead.
