Finally, someone who understands Mexican food! Final tip: the 5/5 dry tortillas are not worth salvaging. Instead, you should spray them with some oil, sprinkle them with salt and bake them for 10min at 330°F. Now you've got easy, cheap, fresh tortilla chips you can use for snacks or chilaquiles. If you've got an air fryer, cover them with a steel rack so they don't curl up and fly around while cooking.

I think that's more of an issue of locally available goods. Here in Chicago we have a massive El Milagro factory that sends out tortillas fresh daily to supermarkets and also neighborhood tortillerias that you can go straight to the source.

​@@arthurcatrambone1982Yeah, youre def prty right there as i only noticed when i moved to the midwest how all the grocers back in Oregon were able to have an entire display dedicated to a gigantic variety of corn and flour tortillas of many sizes... Back where i lived in Oregon was in a city where the elementary was bilingual (english & spanish ofc) and the city just 10 mins north of that one was chockfull of businesses with only Spanish signs on them, not even tryin to appeal to English spkin only ppl cuz that place was very hvily Hispanic populated, with a lot of first generation immigrants and their kids, both in the 90s when i grew up and the 20s when i moved away. All those Hispanic ppl tho meant that we had some of the best bakeries and carnicerias and otherwise around almost any neighbourhood; while ofc they were the ones supplyin the bigger chains with those tortillas, but also the rly delish breads that are practically donuts but better in every way. Here in the midwest, theres like eight tortilla options and theyre all the same 10" flours save for that exact 5/5 dryness corn tortilla xD

To be fair, dry ramen noodles with a sort of flavor packet sprinkled on it all crushed up is a very popular snack in Taiwan. It's also very delicious.

I'm not sure that they are popular per se here in Canada but I do know that when I was in school it wasn't uncommon for kids (myself included) to eat it like that and I still do that to this day, I do also eat them cooked it's a different experience. Crush up the bag before you open it, sprinkle the seasoning on it, hold the bag shut and shake it. Enjoy you have yourself these nice crunchy savoury snack. Although depending on the brand you probably only need about 1/2 of the pack of seasoning because they're extremely salty unless diluted in water.

I don't get the strangle hold terrible tortillas have on supermarkets. It's rare, but sometimes I see some smaller brands with wonderful tortillas but they're always way more expensive. I started lucking out because I subscribe to imperfect produce and they often have a brand of blue corn tortillas that are decently priced.

About 20 years ago, my two Mexican aunts (I’m half white and was raised by my white mom) and my cousins all got take out and I microwaved my tortillas with paper towels to steam them up. Both my aunts made fun of me and called me a gringo (not gringa…) and it really hurt my feelings. Thanks for the validation all these years later.

I kinda got the same shit from my family. I'm Mexican and so are my parents but at some point I realized their method of warming corn tortillas on the burner sucked ass so I microwaved mine in a towel and got endless amounts of shit about it from my family. I still do it this way and they're still over there using fire like cavemen to make the most fragile tacos known to man.

I didn't know that I had to heat corn tortillas. I stumbled across heating the flour ones somehow along the way and they do taste better. I can't put into words how I'm glad that you helped a problem that I never would of realized existed!

You have no idea how valid I feel bc you showed off the tortilla steaming inside of a wet towel. My mom showed me that 16 years ago and every taco night has been fueled by microwaved store bought tortillas (or abuelitas misshapen fresh ones).

So I've been making your chicken tinga recipe, and one of the only problems I was having with it was this exact issue. I never eat tortillas much at all, so when I bought some corn tortillas, I was pretty disappointed by how dry and weird they were. I had no clue there was more prep involved, I treated it like sandwich bread where you just... use it! Thank you for this additional info.

Watching this felt like unearthing a memory capsule in the back of my brain. I've seen so many of these techniques used at family dinners with the Mexican side of my family in the past, but I never really questioned why they did things in such a specific way. Seeing the cotton towels and the styrofoam was spot-on and really gave me a better understanding of those dinners and parties I spent much of my childhood attending worked. Not to mention it was great info for the next time I want to get myself some corn tortillas!

The steaming applies to hot dog buns as well. Wrap your weiner sleeve in a damp paper towel and nuke it for 20 seconds depending on your individual microwave. You get a pillowy soft bun that transports you right back to your favorite ballpark. Now you’re able to serve yards of delicious meat tube every time, but remember to practice safe grilling and use condiments.

Store corn tortillas work just fine for me, I double them up and pan fry in a decent amount of oil until slightly crispy then stack them up to steam up a bit. I always get compliments on my street style tacos with this method

This video changed my life! I grew up in a border city and we could get fresh tortillas literally anywhere. I moved to South Carolina for work a few years ago and had given up on corn tortillas cuz I could never heat them properly. I had no idea you had to heat store bought ones differently than fresh made ones. Tyvm.

toasting factory corn tortillas over an open flame also works. it doesn't make it soft and pliable but rather crisps it up a touch to give it a bit of crunch. and tastes good.

My favorite way to make them is to deep fry them in a pan for a couple minutes. Excellent for taco shells. They get a crunch, but are still flexible

I’ve always used a little oil to reheat tortillas if I don’t want them dry but adds extra calories. I love these water hacks and will try them now!

You can find a plastic in-between Styrofoam and clay price option in most Indian grocery stores that's made to hold rotis. Same problem though, you need to put a cloth towel in there to absorb the steam.

Hey, thats good to know! I love corn tortillas but they come in such huge packages I often end up with a half a pack that could probably be ground up and turned back into corn flour. 😂 If I dont give up and throw them away i usually make a casserole with them. Nice to know I have a few other options.

I usually need to double up factory made corn tortillas, so the strategy I use for cooking to double stack them in the pan. The top tortilla locks in air moisture which steams the insides which makes them pliable, while also leaving a crispy outside.

a steamer basket seems like the perfect application for this, it could keep way more than a single serving of tortilla's warm and pliable depending on the basket and it would be way easier to reheat since it serves as both a warmer and a reheater.

I like frying my corn tortillas in oil and building the taco in the pan, frying it on both sides. the cheese melts perfectly and the tortilla is a combination of crunchy and chewy. so good

I've been doing this for a long time, since the moment I realized reheating torillas made them so much better. I use "worst case" store bought tortillas, and typically use an oven to heat them back up. Basically I turn on the oven to the default 350F, and after a little bit (the oven isn't really fully getting to temperature, doesn't need to be precise) I put up to 8 of them on a pan and stick them in. I wait a few minutes for the texture to start to change, and flip them over for another few minutes. Otherwise the bottom becomes too wet from the moisture they release. When I take them out of the oven I flip them again, and I'm all set.

Easier than a wet towel is putting tortillas between two plates, the top one upside down. Sprinkle on some water and microwave; it creates a small steam chamber between the plates. This works for everything you want to steam or reheat and should be the default method for reheating anything in the microwave.

Sadly, here in Germany acces to authentic mexican ingredients or even a simple corn tortilla is basically non-existent. Actually I don't think I have ever seen corn tortillas sold in Germany.

Yep, my brother moved to South Germany for 3 years and he basically ran a small tortilla business doing them at home. Takes practice but it is not more difficult that making brownies

I really need to try your freshly made tortilla video. I had tried corn tortillas from the shop before and even reheating them well but for some reason I get a funky almost chemical taste off of them. Being in a place with few mexican people doesn't help I imagine.

Lol, I've been getting store store tortillas and just toasting them dry on a pan, and even doing just that theyre very tasty and dont fall apart when I make tacos with them, but you're right- boy howdy are they dry 😅 I'll have to start adding some moisture when I'm toasting them for some steaminess

I bought two packs of vacuum sealed corn tortillas and warmed them in the microwave, as per instructions - they crumbled like nothing and just weren't...nice. gonna try this tip next time!

Last comment, I've had my warmer for a month or so & its held up great! I microwave the tortillas, so for the water I barely wet my hand & just flick some into the holder. 15-20 tortillas will stay warm for 40 mins even with the frequent opening. 5/5

We don’t have a microwave rn, waiting for the kitchen remodel to get a nice one like bet shaq, but we wrap those ‘tillas in foil and steam ‘em up in the oven

i think the softening of flour tortillas is more about starch retrogradation, i see the hardening and softening again with heat with flatbread made with no fat

Despite my family not using water that much, instead just opting just for the camal, they still come out relatively still pliable once we’ve let them sit. I suppose it’s mostly since when we have them sit in the towel they almost are steamed. Though I’ll have to give this a try, maybe compare water/no water on the camal.

When I moved into my new place I bought a bunch of corn tortillas, but I didn't have a microwave or a nonstick skillet to heat them up in. I tried using a stainless steel pan but it just stuck and made a mess, lol. I bought some cheap non-stick cookware and was so happy to finally be able to eat them, lol.

when i was a kid my dads girlfriends kids would eat raw crunchy ramen noodles with the seasoning pack sprinkled over. so i dont have to imagine that one

I use the 5's for mini enchiladas, the olds are way cheaper, just soaked in the sauce to make flexible

Those Guerrero tortillas are pretty good for frying or dipping them inside a consume from a birria pot. Using fat to “hydrate” the tortilla instead of steaming/ using water. It also gives color and such a depth of flavor of the meat translated into a tortilla for a taco. Birria is what’s using used for dipping the tortilla in the fat but honestly you can do it with most meats. Chicken might be the hardest but as long as you have a little bit of fat you’ll be fine.

Make your own with Organic Masa from Bob's Red Mill or King Arthur. We cook our's on a Breville Smart Grill it is so easy. We alternate our daily lunch between corn and wheat freshly made tortillas.

I like my tacos with slightly crispy corn tortillas. I usually try to fry store bought ones up in the pan a bit with oil, but I get pretty inconsistent results. Any recommendations?

Would a bamboo steamer basket also do the trick? Or would that be to much moisture?

You mean for like Bao / dumplings? I’ve used one before but tortillas need much less moisture than dumplings do! Let me know if you try it and how it works for you 😊

Yeah per the other comment, that seems a bit overkill for this. So long as the tortillas are covered and there's enough moisture, you should be good with just even the towels.

Wow what a great video. How would you heat homemade frozen corn tortillas? I've been making my corn tortillas on Monday for use throughout the week, so I've been freezing them after pressing them. When I heat them directly on a hot cast iron, they crack and crumble. Any advise on how I should heat frozen ones?

I really prefer eating corn tortillas straight out of the bag. I’ve tried heating them all kinds of ways but they still taste better to me just as they are.

There used to be a tortilla shop neare that had fresh corn tortillas daily, and fresh in house made salsa. I miss it, it sadly died, but God the chilaquiles were ripping during that age

We do a plant-based diet with no oils and very few processed foods. My husband's cardio doctor put him on this diet and more and more hospitals and doctors are doing this for their patients. If people are going to use oils then it would be faster just to buy them. I think the reason to make them is for a healthier outcome.
