And I thought that I knew all the fish handling tricks. Thanks Bruce. If you have ever noticed a bit of softness or blood in the salmon meat near the tail, that would be from handling the fish by the tail instead of the head. It would be more noticeable with larger Coho and Kings. I would definitely trust eating anything from your bounty, you take excellent care of your food.

You should try using an electric pressure washer. I tried it for the first time last week. You remove all scales and slime within 20 seconds. And the fish skin feels like leather to the touch.

Curious, could you just cut the skin off? Perhaps the skin holds the salmon together for smoking. Anyway, I appreciate your videos and have subscribed to your channel.

If you D slime and de- scale the salmon first, then the skin has no fishy flavor. Then after it’s finished smoking, you can pull the skin off if you would like. Ileave it on because it holds the oils underneath it in the meat then when I jar it all that wonderful fat stays with it Making it much more nutritious.

..and by doing it outside with non toxic elements, the water just returns to the water table.
