If you want to roast coffee at home then the Gene Cafe Roaster is a great starter. I've been using it to home roast coffee beans for a few years, and it has not only saved me money (over time) but it has also taught me a new skill. You can deepen your knowledge of coffee with this machine.
In this video I'm gonna talk through some of the fundamental basics of coffee roasting, and then walk you through roasting Brazilian and Ethiopian coffee beans.

Good video, and good tips on roasting. I have had a Gene Cafe since early 2007 -- just over 16 years now! I had to replace the heating element once during that time, but otherwise it just keeps going. I roast about two 8oz batches per week, plus more for holiday gifts, so I have put 900+ pounds through it. And it's still going! The early video comments about it "paying for itself" are absolutely true. I do have one caution for people watching this video: While I agree that pre-heating is important, you should NEVER NEVER NEVER unplug the machine while it is actively heating! If you want 250C preheat, then preheat to 275C -- and turn down the temp (so the heating elements are off), wait 30 seconds for the elements to cool, and only then unplug or E-stop. Unplugging the machine while the elements are actively heating, as advocated in this video, will seriously lower the life of the heating element. It is basically "red-hot" when heating, and suddenly turning off the air flow (fan) will cause oxidation or even partial melting of the heating element. Don't do it!

I have the same roaster, I just bough a new one because my old one was worn out efter many many years of great service. I roast for 6 minutes at 160 degrees, and then another 11-12 minutes at 235. Makes perfect coffee every time...

@@krogilds Thanks Knud , I roasted to your recipe, I’m drinking it at the moment, really impressed. Thank you. I’m always interested in how other people roast and I have just modified a recipe I got from Charlie, I roasted the recipe he sent me and it was great but I wanted to see if I could darken it a bit more, so I roasted the last of some Jamaican Blue Mountain I have and will find out if I’ve developed a new recipe, or not. I will modify yours when I roast next, in a couple of weeks.

For coffee lovers seeking the most flavor, you should aim to balance the degassing of CO2 with the loss of important aromatics. For darker roasted coffees, this period usually starts after the first few days after roasting. For lighter roasted coffees, it's a good idea to wait a little longer before diving in, about 5-10 days. This is because dark roast coffees are more porous than light roast after spending more time in the roaster.

Want to followup... yes should should wait, at least a day or two... at least... Some strains are very good around 3 days, general 3-5 day period is the best, in my opinion (and others). Some require a little longer. Don't miss the first cup waiting too long, try one each day and see how you like it 👍

Let a comment on another of your videos and subscribed. Just went from many years of air roasting to my first drum, this one. Struggling with not being able to hear first crack and "bean rattle" with this but mainly trying to understand why the timer is going after several times long before my programmed time is reached. Thanks for the tutorial.

Glad you found it helpful. How have your roasts been so far? I found when I first started on the machine I would burn beans frequently, but now I've got the timings down really well for the beans I'm using and the coffee coming out is just divine!

Great easy to follow vid!!! In my experience the chaff collector doesn’t do a great job so I go outside and pass the coffee from basket to basket letting the chaff fly away. Also I’ve tried drinking a fresh roast immediately and I can’t really pick that much of a difference. It’s interesting to notice subtle differences from day to day however. Ive always read 10 days is optimum but I enjoy it at every stage 😬 Traditionally Africans roast and drink in the same sitting so I think it’s definitely worth trying.

I start between 240-250 degrees C, and drop to 240-235 degrees C, and for my Arbica beans, this gives me a milk chocolate flavour on the front pallet and a vanilla flavour on the back pallet, and for my Rubusta I go straight for 250 degrees C, and I get a mix of flavours depending on where the beans are from

I had this roast machine for 2 years and I experimented a lot with various settings and coffees There is only one way to roast with gene cafe and have REALLY good results Batch size, 200gr for low medium dense beans and 150 for really high dense Preheat at max temp for 10' and then act quick and put the beans inside Roast at max temp and watch for 1st crack Now, if you want city roast, 15"-30" after finished 1st crack, stop the machine and quickly cool the beans with a fan outside the glass, I had a diy sieve for this

Yeah it's a little hard to work with and you need to find the ideal settings, but it's a good roaster for the price. Now I use the sandbox smart roaster and get a roast curve which is super useful, and my coffee tastes much better these days

No need to pull the plug to allign the handle. Just hold down the red button. The heater and fan will stop and the chamber will automatically rotate to the removal position.😎

Thank you Charlie for the video. My first two roasts were nasty, bitter, and flat. After talking with some folks I realized I had baked the beans. Going to try your suggestions for my next batch. Also, you might want to put the fahrenheit number in as well for those of us across the pond. ;)

Oh yes, I should do that going forward. I don't really understand fahrenheit but I could just look it up! Advice with the Gene Cafe, if you cant get enough heat early on in the roast, try lowering your batch size. I wish I had known this back then but if it says 200g in the promotional info, that usually means 150g is more controllable. Good luck!

Great video. One concern though: I'd be wary of heating up the roaster and then unplugging it. To not overheat and risk damage, I'd think that the fan in the heating element would be really important.

That's a good point. I'm sure there's a possibility of damage, but without heat at the start the charge temp is gonna be so low that you'll have a pretty bad result a lot of the time. It's a beginner machine, I really ought to upgrade ;)

@@castaneasounds I'm not sure but I've been reading a few books by Scott Rao, a well-known roaster, and following his advice I've gotten some really great results. When I get a chance I'll do another video with more details about roasting.

Constructive feedback: the music is too loud and distracting. I've also gotten advice from others to use the emergency stop at the end of the roast rather than using the build in cooling phase. This is because the cooling phase does not cool down the beans quickly enough, and you may risk overshooting the roast.

I have heard that if you don't let the machine go through its cooling phase and E stop the roast, you can damage the machine. I have tried both methods and I personally can't taste any difference in the cup.

@@minimatt999 I don't know if it makes much of a difference, but I'm just impatient and so I almost always stop the cooling phase early :D

You can stop the cooling, insert the canister, and let the Gene finish the cooling cycle. However, I actually find that the cooling cycle works just fine for me. I tried both, and I expected to have to cool the beans further down after the cooling cycle has finished, but I don't think it was even necessary. (Note: I usually cool the beans real fast in a strainer with a vacuum cleaner). I'm a noob btw, so take my advice with a grain of salt.

@@martinklopnof5284 Commercial roasters have a more aggressive cooling cycle but have a greater bean mass to content with plus the pressures of time. We'd say that if you can get a good roast using the manufacturers recommended instructions then go with that.

Please clean the chamber.. Its so dark oily😂.. Some tips you can soak it with some espresso detergent and rub with some hard brush to loosen the oils.. Nice channel anyway.. How do you find lighter roast on gene? I never tasted any goodness from medium roast to below (my medium is 2-2.5 mins after FC).. Usually sour and grassy.. In my opinion this roaster is suitable for espresso roast (city plus and up) than filter.. What do you think??

Just got my Gene Coffee roaster. It does not get hot enough or I'm not sure what. My beans just yellow in color after 30 min. roasting and on the max. temp. Do you have any answer to this?

Sounds like it is broken. If you bought it new then you should use your warranty. If it's second hand I know the heating elements do wear out over time, and perhaps you could buy a replacement from the manufacturer.

In page 9 of the GENE Cafe Roaster manual, 6- Safety Precaution, the last sentence of the top left box mentions that "Do not preheat this product without coffee beans". Is it really safe to do the preheating as you suggest? Does the preheating really make any different as drying process does not start any chemical reaction? The suggested temperature and time in Roasting Level table in page 6 must already include the time require for beans heating at the beginning from room temperature. Thus, with the pre-heating, the suggested times in that table become too much to reach the desired final results.

You're probably right. I don't have that roaster anymore, but I think going from zero is not a good idea. You're probably going to get baked coffee beans every time. I learnt a lot with the Gene Cafe, but that's a drawback for sure

Question: I have just brought a Kaldi wide coffee roaster 😁 and iv been seeing a few people online that have made extraction fans to, as they say " regulate the temperature better'' and to get rid of smoke that might ''effect the flavour of the bean'' I would like to know your thoughts/ oppinion on that. good video as well 👍

That's a difficult one. Airflow during roasting serves a number of purposes : 1) removes chaff from beans 2) through convection roasts the beans 3) removes smoke which a) helps the coffee develop flavour and b) stops the coffee developing flavour The last point in all seriousness is meant to demonstrate that roasting in a smoky environment might add to flavour as well as take away from flavour. It's down to the bean. By sucking too much air out of the roasting chamber you mighr drop the temperature and slow roasting times or have an underdeveloped roast. I like a cleaner roast so I try to get rid of smoke and I would recommend that approach. On a gas roaster there's a danger of extinguishing the flame with low airflow. On the kaldi I guess it's just a case of taking away too much heat. We've asked the Kaldi guys for a demo machine so you never know you might see a video at some point and we can try it out.

@@homecafecharlie did two roasts, both of them had no taste of smokyness, and the bean tasted amazing. could it be just for bigger roasting machines I wonder ? as im only roasting 250 grams at a time

@@haydnwood6051 good to hear that. The Gene Cafe I use has never really had a problem puffing out smoke at a fair rate. If you use bigger beans then they might fill the chamber a bit more and restrict airflow but it seems like you've found what works for you :-)

Hi Charlie, is there a reason why you need to pre-heat the chamber before loading the beans? Do you see the difference or have you done the comparison in terms of the taste when comparing with when you loading the beans right from the very beginning?

I read about it in Scott Rao's book. If I remember right you wanna get through the yellowing phase as fast as possible, and starting at a high temperature helps that.

The chaff goes into that container in the back, so you just need to empty it ideally after every roast.

I do it for 6 minutes and it massively improved the coffee I got from it. Been doing this for 2 years and no problems with the machine

@@homecafecharlie Thanks for your answer. I've visited some Danish forums on the topic and the experts there preheat it at even 240° so I'll use the "roast profile" in this video. Somehow it feels right. I mean, even though there are a lot of oppinions on this topic it sounds allmost as if it's a law of nature to turn down in the browning phase like when cooking a steak. I'm sure this is the right way and have tried to figure out how much more time has to pass in order to go down to 220 when roasting without preheating. And tried to go for the same color of the beans as in the video.

I wonder how you can get the Gene hot so fast? What current does it run on? You got 210 C in less than 5 min. I usually preheat more than 10 min .. I have roasted some beans for over 20 min, and still not hit the second crack. (A two stage roast, first drying at 160C for 8+ min, take beans out, cool them, and then preheat Gene again, and then roast for 20+ min.)

Wow, that's really odd. I'm on the 100V current they have here in Japan, but the Sidewalk Roastery in Cambridge we did a video on has a Gene Cafe Roaster for sampling, and theirs can roast a bean to charcoal from no pre-heating in 15 minutes. Maybe get the heating element in yours looked at. It could be defective. Let me know how you get along.

@@homecafecharlie I did a timing test today, where I ran the roster empty for 30 min. Then I let it cool down and then rest for about a minute, and ran another test. I should post (some of) the results here, just to confirm that my heater is defective. The very first time I turned the roaster on, I got an error, but I forgot which one. I rebooted the roaster immidiately, and haven't had any errors since.

@@homecafecharlie OK, I found my data: When I started, I set the target temperature to 250°C (max), and the timer to 30 min. (max). The temperature before I started, was 22°C After five min., the temperature was 186°C After about 8:42 (21:3 in the display) I finally reach the 210°C you preheated to in less than five min. It took me 25 min. to hit 240°C. Just before the cooling started (after 30 min), I hit 245. After the cooling and one minute rest, I tried again: Start: 76°C Now with the machine preheated, I hit 210°C in about 4 min and six seconds. I hit 240°C after 11½ min. How does this compare to your expirience with the Gene Café?

@@martinklopnof5284 it sounds like you have a weak or defective heater. I would reach out to the manufacturer and let them know you're having problems, cos that basically makes it next to impossible to get a good toast as the temperature drop from charge (when you put the beans in) will be very hard to recover from...

@@homecafecharlie I noticed, that if I set the timer to about 5--16 min (doesn't matter), and the temperature to 60 degrees, starting from a cold machine, I consistently get an error. The manufacturer claims this is normal, so I'm curious to see if other Gene Café owners can reproduce. Oddly enough, I don't get the error, when the machine is warm.

Hello! Thank you for the informative video. I was wondering if you could share the temperatures and times you use for the Ethiopian coffee, that's what I predominantly drink and I just got a Gene Cafe roaster. Any help would be very appreciated thank you!

I go a little higher temp with my Ethiopian - I aim for a charge temp of 238* then when I drop the beans I go to 230. Then I set a timer on my phone and raise it 5 degrees every 5 minutes, and usually it takes ~12 minutes to finish first crack, so by the end it's at 240. By then it's a delicious medium light roast. I hope that helps!

I've had a Gene for about 10 years and I roast about 30 lbs a year of espresso blend (mostly Brazilian, some Colombian, and Uganda). You don't have to pull the plug to shut off the machine, just hold the red temp button for a couple seconds. I would recommend you let the beans sit in an open container or dish for 24 hours to properly degas, before placing them in an air tight container. I love my Gene. With the price of quality green beans as opposed to roasted who knows when beans you buy in town, I have saved the price of the Gene several times over. The original Genes had poorly made heating elements. I was replacing mine about every year to 18 months. Then about 5 years ago they either upped the quality control or found another Chinese manufacturer. I installed the last heating element 5 years ago and it is still working just fine. I bought two just in case. I hate to be waiting on parts when I could be roasting fresh coffee. I am dubious as to the value of preheating your chamber. Just start at the lower temp until the beans yellow and ramp up while listening for the crack. 550 pounds! Yikes! They sell for less than $600 bucks in US.

Yeah usually there's a 10-30% markup in the UK. It's surprisingly affordable in Japan where I'm filming the videos from - usually anything coffee related that's more expensive than a Hario hand grinder is double to triple the price! @@MattHenders0n Not on my machine. Holding the red button in invokes an emergency stop. Unplugging the machine can cause damage, at least according to the instructions. An emergency stop isn't recommended either, but is safer. Bottom line, don't let those hot internal parts sit very long before restarting or you could cause permanent damage.

@@THerd-um5tl whole point is starting roast is a preheated chamber, so when I do this I have chamber pulled, loaded, reinserted and roasting in less than 60 seconds. Yes, you could hold button for emergency stop, but I don’t believe there is any meaningful harm done by my power failure...

@@MattHenders0n Thanks Matthew. I should have stated the chamber stops rotating immediately when doing the emergency stop, it doesn't go through the cool down process. I like to pre-heat the chamber to 350º F, perform an emergency stop and add my beans. I let this run for 3-5 minutes for a preliminary dry/warmup, then increase the temp as desired. I've had my machine for 7 years now without a problem, so I can say with certainty it works for me. If you're really good, you can pull the canister out while the machine is rotating, fill it and reinsert. But if you miss, you could seriously break something. Not a recommended move, but I've done it countless times as well and it prevents any potential melting of internal parts because airflow continues to move over them, even though the chamber is removed momentarily. The issues I have with home coffee roasters they don’t roast enough per batch. It takes you almost an hr to do 1 pound. I don’t know how much coffee many people go though but a pound for my household isn’t nothing.

@@stevo890 This one maxes out at 200g, but I tend to do 180g because I found that overfilling the machine makes the roast less even.

Don't have a window to use, and ??? for the money, why don't they put some sort of filter on the roaster? A charcoal filter maybe?

Good question. I think for the price it's a remarkable machine. They have to cut out the kind of features you might find on a more expensive roaster. I like it and would recommend it

Since this is an old video you probably won't comment. I have the gene roaster almost 9 years now. I've used it a lot but not continuously. But these are my coments. 1) first I don't think it does any good to preheat. And pulling the plug on a hot unit could cause increase internal degradation. I would not do it and I really don't think it's necessary. 2) the heating element is it is either on or it is off. It doesn't matter where you set the thermostat. Setting the thermostat above the internal temperature, means that the heating Element is on it doesn't put any more power to the unit. If you turned the thermostat higher . So if you want to cook the beans so to speak then set it below the first crack and let the beans spend some time there then turn it up to a temperature above first crack. I physically live in Panama and travel to Colombia frequently so good access to local beans. One challenge I have found is finding beans that are all the same size. beans even from sources in the United States, I sometimes get packages of Coffee beans that are not graded equally.. I also don't roast more than about 150 g at a time but it does depend on how much chaff that you get from the beans. Lower chaff beans you can go to 225 g 3) my opinion is you really don't have many options. Except for one and that is how long after first crack are you going before starting the cool down cycle. And yes it will coast higher. And again the biggest problem is getting beans there graded equal size. It has been a good unit it has many hours of roasting on it. And you don't have to be a rocket scientist to operate it 😁

Thanks for the comment. I don't have the gene cafe anymore, but I agree it's more of a set it and forget it kind of machine. You can't get great roasts out of it because of the lack of temperature information, but I still enjoyed using it for the 3 or so years I had it.

@@N9524Q it's hard to say at this price range. I did a review of the Sandbox smart roaster but it's 100g, so you have to roast more frequently. They have a 500g R2 roaster coming out, but it's much more expensive. Aillio Bullet would be my next step up, but that's expensive too. Roasting isn't cheap if you want to do it well 😅

That might have been a darker roast I was trying out. I had a lot of footage for this video. I generally avoid it now but I did test with darker roasts and didn't like it very much at all.

I'm not sure I got that right so please confirm the roasting process: 1. Preheat @ 210°C until the machine gets up to that temp. 2. Force stop the machine 3. Load 175 g of green coffee beans 4. Start roast at 235°C 5. At the start of browning (~6 min. in) lower temp. to 220°C 6. Raise temp. to 230°C (when the machine reaches 220°C ?) 7. end roast at 16 min. 8. let machine cool beans I think you missed some really important points in your video: a. Could you please mention at which point in time had FC started? b. What means beginning of browning to you? How do you determine that you are there? c. How much did the beans weigh after roasting? d. And most importantly how did it taste? e. How did you roasted the Ethiopian coffee? Same process but end it sooner? When? f. Is this process how you normally roast a coffee for the first time?

Wow that's a lot of questions! I don't weigh the beans after but they supposedly drop 10-20% weight from the roasting. I just look at the beans colour. It's easy to do with the window. It tasted great, and I use similar processes for all the beans and fine tune it for each one - every bean is different so what works for the Ethiopian beans I have probably wont be the same for the ones you have as they are almost certainly from different farms. I usually roast with this kind of profile for every new bean I buy, and adjust based on what flavours I want and how dark I want to go with the roast. I hope that helps!

Kinda seems like this is kinda cheaply made. The constant clicking while the drum was rotating is horrible also the idea that using it will damage the motor and that the plastics could melt. This is not good why has the company not sourced the correct plastics that can handle really high temps also I can imagen they are using a non branded hobby motor. I personally would not buy this roaster for these reasons I can see this product not long living. The fact in the plastics melting is crazy and possibly extremely dangerous!!

I haven't had any melting plastic and have been using it for about 3 years now at least once or twice a week with no problems. It's a roaster for $600, so for sure they will have cut some corners to bring that down from a bigger drum roaster that might start at $3000.

I usually just give it 30 minutes or so. I wouldn't use this for back to back roasting all day long, but you can do a few batches without worrying.
