Watched many shaping tutorials and always strugged. Shaping is my most challenging step while preparing bread. Watched this twice, committed it to memory, and the (85% whole wheat) dough responded to every step exactly as you showed. It's the best tutorial I've come across. Thankyou.

I’ve baked bread long enough to understand the principles, hydration, percentages of salt and yeast. The bread I baked tasted good but didn’t look uniform (like the baker really knew what they were doing). Kathleen’s KZfaq shaping tutorials changed my bread baking game. Superior instruction. Just got started baking my own bread. This technique should help. I get good bread, but it's got holes in it. Your dough looks a little softer than mine, but It's hard to tell by just looking. Thanks for the tip.

Yes, this method of shaping bread will work for sourdough as well. I use a different technique for high hydration sourdough as the dough will be too floppy for this technique. This works well up to about 74-%75% hydration.

Most of the time this works really well for me and it always makes a beautiful shape, but sometimes my loaf has a big hole in the middle. What would cause that?

Thanks for watching my video! Big holes in the middle of a loaf of bread are generally caused by too much flour on the work surface. Too much flour will coat the dough and cause it to not adhere to the piece of dough folded over onto itself. Try a very light dusting of flour on your work surface and it should solve the problem.

Thanks again for watching my videos. Yes, after the shaping I put the bread into the pan and let it rise. Time indicated on the recipe is generally a good indicator of how long to let the dough rise, except in cold and hot weather. I also use the finger test and how much the dome of the bread has risen above the rim to determine when to bake. I write notes on my recipes to remind myself of how things went the last time I baked that recipe.

How does one shape dough to be baked in a bread machine which doesn't allow for a 1 hour rise after shaping? It only allows for a 20min rise?

Some machines will let you program the rise times. A 20 minute rise is very short and must be using a lot of yeast. I would look for another machine.

Once you put the dough in the pan, do you leave it to rise for few minutes? Or do you put it in the oven? Newbie here :)

The dough should rise at least 1-hour. The recipe you are using will have a recommendation for the final rise time. Final rise time will vary due to the amount of yeast and the room temperature.

Yes, when you pat out the preshaped ball into an oval, turn it so it is wider and proceed with the rest of the shaping technique. If it is still not as long as you want you and elongate the loaf with a few back and forth rolls.

I want to try scoring my dough but I'm afraid to do so because there are bubbles on the surface. When I'm shaping the dough, the bubbles come to the surface as I roll. Is this because I should've kneaded more before the bulk fermentation?

Some bubbles when shaping bread dough, especially yeast bread, are normal. A lot of bubbles might mean the dough was bulk proofed too long. As far as kneading, check out my video on kneading dough. It is a different method and absolutely fool proof. You will have perfectly kneaded bread after the 4 fold over kneads. Note this is for yeasted breads and not sourdough. I weigh out my loaves so they are all equal. If you send my your dough weight and what size pans, I will calculate what each loaf should weigh.

@@thomascushing3760 A good rule of thumb for bread pans, (if you are not using a scale) is: 8 ½ by 4 ½ bread pan, up to 3 ½ cups flour. (or If you are using a scale up to 425 grams of flour)

What is the height of the pan you used?

The pan I am using is 2 ⅝ inches high. It is an 8 ½ by 4 ¼ icy 2 ⅝ nches is size. It can hold up to 750 grams of dough.

@@SanDiegoArtisanBreadSchool Okay, thank you. I just ordered a loaf pan a few inches longer/wider than that but has the same height. Does the material used or color of the pan affects the bread's cooking time? The one I bought is a black, non-stick carbon steel loaf pan.

@@YTBurner Yes, if the pan is a bit longer than the size pan the recipe calls for, you might need to reduce the amount of time needed to bake the bread. The temperature should remain the same. I would keep a close watch on the first loaf you bake and make changes accordingly. Generally you are looking for an internal bread temperature of 195-200F degrees.
