I have been buying meat from there for years. This is the first cooking video I have done in years. We will see how it does. I may do more.

Hi Frank I was just wondering about might shred if I can take it and get up 7ish hours later or will I have to have the full 9 hours nice food btw

Smoking meat is all about the touch. Not really the time it takes to cook. Once the meat is up to temp. Leave it in foil until you heave the correct tenderness. With the chuck, I should have pulled it off about 15 minutes earlier. My plan was to slice it not shred it.
