Thanks for the great video. However, there is an error in your explanation about chicken nanban.  Chicken Nanban is not from the Kansai region, but from Kyushu region (Miyazaki prefecture).  Also, you need to pour not only tartar mayonnaise on the fried chicken but also sweet vinegar called "Nanbanzu". (since this vinegar is the origin of the word "nanban" in "Chicken Nanban") And although the word nanban is an old word that refers to foreign countries, especially Portugal and the Netherlands, this dish is not of Portuguese origin. Nanbanzu (directly translated as "foreign vinegar") refers to a new sauce at that time that incorporated ingredients and cooking methods that did not exist in Japan more than 400 years ago, and is a sauce made by adding sugar and chili peppers to vinegar. If this dish is of Portuguese origin, then all dishes using tomatoes might be said to be of South American origin

The Hiyashi Chuka Soba looked appetizing and also the owner made the soba look artistic! I was amazed the owner spoke Japanese very well. But you're a super trouper in handling the heat and humidity Shizuka! I remember when I was in Japan during the summer, I was taking a shower twice a day and drinking a lot of ice cold beer. Dang! Great vid, only wish I saw it 5 days ago when i was in Japan. It was scorching hot. I'm from Hawaii and we have miserably hot summers as well, but not on Japan level misery. Anyway, all the dishes look oishii, and I'll try those next time. Aloha and ganbatte.

First time I've seen alcohol kakigori! I wish I could find a spot around me that can do that fluffy shaved ice but alas. Not to be. I do need to try some cold somen on a hot day. The heat and humidity decimated my appetite for the month I was there, especially in Okinawa. I ended up veering towards conbini sandwiches because I just wasn't feeling in the mood for hot food.

My favorite for summer is also the the simplest. However, it may be a northern Japan thing: 生豆富 『Namadōfu』:: simply a wedge of Tofu topped with fresh finely minced Ginger then amply slathered in Shōyu or Tamari...

Another is fairly simple as well - have no idea what is called :: A fillet of Salmon descaled but skin on. splash of oil massaged about then placed under the broiler until lightly crispy. Covered in Ōroshi Daikon (a special kind of grated that is more of a pulp), then amply drizzled in Shōyu or Tamari.

Once went to Okinawa in June. BIG MISTAKE! Temperature was in the high 80's F, but the HUMIDITY! Plus, no breeze but if there was a little breeze, it was warm! Resident told us June is not bad; August is the worst! Vowed I'd go back in a cooler month. Just went back in January; temperature in the low 50's. PERFECT!

Maybe eating a hot bowl of ramen has the same effect on your body as eating spicy Mexican food. It actually has a cooling effect. Well, I love both ramen and Mexican cuisine and will eat either no matter what the weather is.
