You're saying the faulty sensor is stuck open keeping the fan on. At cold engine temp the sensor should be closed so the fan stays off. The jumper wire means the circuit is closed. If the wire was disconnected and the key on the fans will stay on.

It's purpose is to let the computer know when to turn the fans on, the small one wire one on the pass. side is for the gauge in the dash, the one next to it is for the fuel injection, it tells the computer how much fuel to let in according to the temperature

At 5:20 u didnt really explain the purpose of the wire bypass? If fans stay on wouldnt it be tbe fan switch sensor but your changing out the temperature sensor
