The Scorpion and the Fog Cutter were two of Trader Vic's cocktails from the 1930s that remain popular today. The Fog Cutter may have its fans, but many seem to find it overly tart and its lack of predominant rum flavors or tropical juices makes it an unusual cocktail to become such a popular tropical drink.
It's OK if you like a Fog Cutter, there's nothing wrong with that. I personally am just not a fan. In the sea of Tiki and Tropical drinks with intense flavors and complexity, I agree with Trader Vic that I don't see why anyone would order one.
Instead of making the original Fog Cutter, we'll turn to the updated version by Paul McGee. It's still very much a Fog Cutter, but more balanced and highlights the spirits. Is it my favorite drink of all-time? No. But it makes an excellent Fog Cutter and if I had a menu with a Fog Cutter this would be the one to use.

Paul McGee Fog Cutter
1 oz lemon juice (30 ml)
¾ oz orgeat (22.5 ml)
½ oz of an Amontillado Sherry (15 ml)
½ oz Dry Curacao (15 ml)
½ oz Cognac (15 ml)
½ oz Gin (15 ml)
1 oz of a Rhum Agricole (30 ml)
Trader Vic's Original Fog Cutter (Late 1930s)
2 oz lemon juice
1 oz orange juice
½ oz orgeat
½ oz gin
1 oz Brandy
2 oz light Puerto Rican Rum
Sweet Sherry Float
Samoan Fog Cutter
2 oz lemon juice
1oz orange juice
½ oz orgeat syrup
½ oz gin
½ oz brandy
1 ½ oz light Puerto Rican rum

i will never understand why you are not a famous youtuber of your kind yet . This channel always brings quality which begs the question wth is wrong with the algorithm .

many of his episodes are only a few minutes long and the youtube algorithm prioritises watch time, and alcohol content is notoriously hard to monetise, but i'm assuming he is aware of this as this video is over the 8 minute mark that youtube prises

All your videos are so fun and informative, but today I happened to be watching with headphones and was extra impressed with how well edited and mixed your videos are. The audio quality’s is superb and beautifully matched it to video. Super high qualitys work that I know must take you significantly longer to produce than what other content creators are doing. I want you to know that it’s appreciated!

Thanks so much! It's a constant balance because I edit with headphones but I know on computer or TV speakers it sounds different and the music is often lost. It's hard to figure out what to edit for when you don't have control on what it's being played on or how its heard. But, this video, audio and editing is what I'm really into and makes it fun.

@@makeanddrink my belief is that whether it's music or video, you edit and mix on the best equipment you can afford, at the highest quality you can manage, and that quality will show through even when viewed on a tiny screen with a cheap speaker. For instance, the way you balance the levels so you drop the audio when the voice comes in, and then restore it when the voice stops, holding a single overall volume, that's gonna sound great on any device! Keep up the great work and we'll keep watching!

Thanks Derek. I am actually sipping on a Fog Cutter as I watch your video! Not the Trader Vic version, but one I have cobbled together from other sources that also replaces the OJ with Orange Curacao and cuts back on the lemon. I find adding a bit of Demerara syrup helps the balance. I'll be trying the Paul McGee recipe next! Loved the historical section on the original Hinky Dinks!

Hi Derek great stuff! Appreciate the historical context behind the drinks and overall quality of video. I highly recommend exploring a drink or two from Skull and Crown Trading Co, a modern tiki bar in Honolulu. Stopped by there 2 years ago working on a cruise ship contract and still remember the taste of their drinks! Their menu is on their website

Your videos are always bloody brilliant, informative, great production and your presentation style is just perfect with such knowledge and ease. Also, where are the tiki mugs from in this video? Love them both!!

Great show! Super professional production and love the history. Alas I'm old enough to miss both Chicago Trader Vics and Lost Lake. I also found more than a few Vics cocktails were too heavy on the citrus(even the Mai Tai...as served at Palmer House Trader Vics....yes blasphemy ). BTW: for newbies or those that don't like Tequila you might want to substitute the Neisson for a different Agricole or something like Wray and Nephew overproof(still funky but not as grassy). Neisson can be an acquired taste(taste before you buy a bottle). And now I'm wondering what would happen if I replaced the brandy and sherry with mild amaro like Montenegro...mmm

I've always made the Smugglers Cover version which adds an ounce of pisco. It's not my favorite but i still enjoy it. Great video, thanks!

I wonder how it would taste with acid adjusted oj instead. Adding curacao just makes me feel like it’s a pumped up Mai Tai

Great video! I enjoy the Paul McGee spec *significantly* more than the OG Vic version. An appropriate (to me) amount of booze, way better balance, and the flavor of the sherry is better integrated.

I had no idea there was an updated Fog Cutter😱 I had one at Tiki Tom's, and have made it for myself, and really didn't enjoy either one. The amount of lemon juice used for the original is just absurd😂

I've always skipped all the tiki recipes with Sherry. After you open a bottle, they go bad in a month or two, right? I feel like I'd waste most of a bottle. Is it a must have ingredient or are there any good substitutes?

The Samoan Fogcutter is definitely better. I've enjoyed these on occasion, especially with a cream sherry as a float.

feel like Paul kinda turned the fog cutter into a riff on the mai tai. having made it, the lemon is different but can't hold a candle to the orgeat and curacao. they dominate and it drinks like a slightly brighter mai tai. not a fan

It's just so overwhelmingly tart that is surprises me when I see it or the Samoan Fog Cutter on a menu these days at tiki bars. Just a completely unbalanced and unpleasant drink. That Paul McGee recipe is far superior to either of Vic's versions.
