Not used in Parathas. Used in ice cream and in baking I guess. It's for texture and an Emulsifier.

Xanthan Gum product ko gadda kerta h and act as Stabilizer . Used in Food industry, cosmetics and even in tooth paste

Citric khatta(sour) kerta h. Zitna khatta chahiye Uske according use kerlo. Koi harmful effects nahi h.

What I read is that one should not exceed 0.5%. so do not exceed 5 grams in 1 liter (1000grams). Please verify as I have. never used or cooked....just advising. what I read. 2-3 grams per liter should be fine
