Thank you for your video. I've been making briskets for a few years now and I've never gotten the hang of the wrap. Somehow they all leaked or I had to use two sheets of paper. This is the easiest and the best.

Thank you. That looked great. I got a smoker for Christmas and I now I'm on my 4th brisket. The first 2 weren't very good. The 3rd was on point. This paper wrapping method makes sense.

@@TheDawgfathasBBQ I appreciate you teaching me how to cook a brisket. It was my first one. Dont care much for the 4 :1 mix but thats just me. May step it to 4:2 . Just for my taste. My brisket was done perfectly. On a stick burner. Had to constantly watch the fire but turned out way better, than it would have without your tips. Ty again. 😁

Rookie question. I know a smoker is ideal; however, if I’m just getting started - can I use a traditional gas grill and get decent results? Or, is it not worth the time to try?

It's not worth it. You have to monitor the gas grills temp constantly because it fluctuates crazy. Imagine doing that for 9 hours, plus I don't think it's safe to run a gas grill for that long, you'll end up having to switch propane tanks before you're even finish cooking the brisket.

If you wrap your brisket during the cooking process but after the bark has set, it will speed up your cooking time. It forces the brisket through what's called "the stall." Wrapping after you've finished cooking it will help to preserve moisture and yield a better mouth feel overall.

I'm confused as you send you ended with fat side up but I think it's fat side down. You placed on paper fat side down and then rolled once so it was fat side up when you folded edges and then you said "it's fat side down" (but it had become fat side up because of 1st roll) and rolled again and said "now we are fat side up" (but I think you are fat side down). I'm wondering if you just need to make sure it is only 1 layer of paper wrapping the brisket and then to place it fat side up on grill.

Making a brisket now, I get the bark and color, wrap in paper but I cannot get that jiggle. I make a 7 to 8 out of 10 brisket consistently, but can’t improve any. More research and attempts I guess.

How do YOU determine when to pull your brisket off the pit and how long do you allow it to rest?

@@TheDawgfathasBBQ I shoot for 12 hours start to finish. 6 hours of smoke, 4 hours wrapped on the pit, 2 hours in the cooler. Today’s brisket, best I’ve made. Solid 9 out of 10! Bark, jiggle, juicy, all on point. Appreciate the videos you make, great info for beginners like me.
