Wrapping a full brisket packer using 24" wide pink butcher paper. One sheet and a couple brisket rolls is all you need. To many brisket rolls will affect how the brisket breathes through the paper. If you get to the end of the paper with the brisket and have a little paper left over, either cut the paper or fold it under the brisket. You want the paper end under the brisket, so the brisket holds the paper down. Brisket's fat cap is bottom side. We got lucky on this one, the paper end matched the brisket's last roll!
18" wide paper would require double sheets and in the end, you'll have to much paper in the middle. 24" wide, 40lb., no wax is best! We stock it at ceramicgrillstore.com
