Sweet brioche bread with a crispy outside and a super soft cinnamon buttery heart. The dough is stacked in layers, so the filling is spread evenly and it makes possible the pull apart effect.
The smell while baking is absolutely unforgettable, this is the perfect Fall and Winter comfort food.
You can prepare it the day before, store it in refrigerator for one day, then let it rise for 30 minutes at room temperature and bake it.
I sugget you to serve it warm, you won’t regret it!

I’ve made this twice this week and came out great. It’s really wonderful to make something like this from scratch and see the reaction when your family tries it and smiles. This is really simple to make. I’m clumsy and not very good with my hands, so if I can make it, so can you. Give it a shot!

I came across this video today and made it this evening with my 9 year old son. I’m a 50 year old man who has never baked a thing in his life (except a jacket potato ☺️). I made this delicious treat a few months back. It was just incredible! Geeezzz, yeah, my wife and I could of eaten the entire loaf in one sitting too! Thee best! I would suggest one thing, if you have a metal bread pan, stand it on end and place the sections in the pan. They will lay flat in the pan while on their side. When you are done stacking them, just lay the pan down flat. It makes life easier! Thinking of another loaf real soon, like today, just gotta check for all the ingrediences. 👍🍞👍

I suggest you to follow the instructions of your yeast: if it's written on the packaging that it needs to be activated, you can make it and soak it in lukewarm milk and sugar. Let me know! Much love

I've just made it and it's the best recipe I could've ever make! Even better than tasty! Very soft, tender, flavorful, easy to remove, evenly baked and has the most beautiful consistency. I've even made it with some icing and it's pure heaven. All the family attacked on it to finish 16/20 loaves in 15 mins! It took me a whole day to prepare but it was worth the time! I'm so grateful to have this recommended to me. Such lovely memories will be sure reserved

I made two yesterday, was worried that some of my cuts were not long enough to fill the pan but it all worked out after the 30 minute rise, this bread looks and smells wonderful and it really does peel apart. Great with a coffee or tea

If you are crazy about cinnamon do what I did. I doubled the filling recipe and increased the cinnamon to a total of 3 tablespoons. They turned out magnificent. The only caution is with the extra filling you will need a cookie sheet underneath the bread pan to catch a little of the extra filling when it cooks.

Just wanted to ask @commentor S, did you knead the bread for a few mins ( like you would normally for bread dough) or did you follow the recipe exactly? I want to make it but was surprised the dough wasn’t kneaded and it still came out amazing

I have tried this recipe! It is PERFECT! Before making this I was afraid that 100g of sugar for filling could be too sweet but it turned out wonderful!! I braided and rolled them in a muffin tray, definitely will make it again!

I’ve been baking yeast bread for over 30 years. Two of my beginning guides have been Craig Claiborne’s New New York Times cookbook, which has a fantastic bread section, and James Beard’s classic Beard on Bread. There is a cinnamon yeast bread in Beard’s book that is delicious but this recipe takes it to a whole new level! I haven’t tried this yet but it’s high on my to do list. I will probably add a few raisins soaked in liqueur a la Beard to make them plump and juicy. Can’t wait to try this.

Ik this is old but is there a certain way you mix it to ensure all the yeast completely dissolves because I kinda just poured the wet mixture in there mixed it and kneaded it

Tip, when you are stacking them, turn your load tin vertically. It’s easier to stack them, as if you were stacking Jenga

@@daniellechandler8023 yes mine stayed in 35 min or so (I always wait for top to be golden brown) AND hope you pre-heated the oven, not opened while baking? Ovens could be different in heating strength but yes it worked for me as above

Total game changer if you blend/grind cinnamon sticks and use that instead of the stuff that you would buy at the store, just made it with that and it tasted amazing gives it more of a kick

I shared your video to my good friends, and one of them made your bread into a bun and filled it with soy garlic ground meat. I'm not good with kneading yet and dont have a mixer for bread...so your recipe is just perfect for me. Again, thanks much.

How Tasty I have just tried using 2 parts unbleached all purpose flour and 1 part oat flour. It came out just as nice. Crispier on the top but still gooey on the inside. I did it b/c I was afraid I didn’t have enough flour, but also a tiny bit healthier hopefully? Hehe...

Thank you so much for the idea! I used store bought pizza dough ( I know! but we all have to cut corners once in a while : ) and also added sliced apples on top of every layer. It turned out good even with the dough indiscretion!

With more filling between the layers the bread will probably fall apart when you take it out of the pan.

I just made this recipe for my family (Something to cheer them up in this horrible time) and it turned out WONDERFUL!! Truly the most delicious thing I've baked, and it was super easy. The hardest part was trying to get that parchment paper in the loaf pan lol. Thank you for sharing this dope video :)

I tried this recipe except I used sliced bread I already had. I first buttered each side of the slices with a cinnamon sugar butter then I dipped each slice in a mile egg wash then assembled the slices in a parchment lined loaf pan and baked for 30-40-minutes in a 350 degree oven. It was so delicious and pulled apart so flaky crisp on the outside and creme brule like on the inside.
