Maybe do a gin tasting, I recently found a gin I absolutely love. Its called Roku Gin strong floral, citrus and pepper notes.

Hey Greg, chemical engineer in training here. The chemical compound in mothballs that gives it it's smell is called naphthalene. Naphthalene is a product of the distillation of coal tar and oil, but there are many similar compounds that could end up in the distillate of a spirit like mezcal. Only trace amounts are necessary to notice it as the smell is super strong. Figured Id drop this here in case anyone was curious!

Guitar Builder here! we use a solvent nicknamed Naptha, I only ever known it as Naptha but to your knowledge is this the same thing?

There is coals that can develop from the burning of the mezcal. So naphthalene makes sense.

Right? I've never understood anyone's decision to drink something they don't enjoy. There are so many different types of alcohols and ways to consume those alcohols that there's no reason for anyone to ever drink something they don't like.

@@frocat5163 fr. I had a buddy bring a bottle of southern comfort (🤢) and mix it with APPLE CIDER (🤮) and got me to drink it. To my credit I did, but damn, apple cider and orange is a really bad combo for my palate

One note about Mezcal (and Tequila): because the agave takes so long to grow it's important to consume agave that is ethically and sustainably sourced. There are a lot of producers that use slash and burn style production to harvest as much agave now with no care given to future agave growth or the ecosystems where agave grows.

That's worth knowing about. Are there certain distilleries to avoid because of their treatment of the land or support for farmers who do? Are there specific distilleries known for supporting sustainable production?

Don Mateo de la Sierra seems solid from like 10 minutes of admittedly not very deep research and only in English. Side note: I will say there is a company creatively called The Sustainable Agave Company which upcycles agave byproducts to biodegradable straws, which really feels like it’s a company whose sole purpose is to muddy searches about agave sustainability. Because the biodegradable straw thing is a drop in the ocean of the larger plastics problem and that website is sleek enough and vague enough to seem like a corporate front.

@@bradsimpson8724 Generally Speaking, almost all the celebrity Tequila/Mez brands are not sustainable. A lot of them also use lab created flavor compounds to cut costs *blegh*

So last I saw Agave is mass farmed in fields not in jungles or forests take your pick. So by tilling up mass land you are in fact mass farming. When you pull the crop is up to you as it was not there originally. This crop is basically not an ecosystem crop due to forced planting.

When Greg talked about getting old and looking tired through work and kids I’d never felt more seen and laughed uncontrollably. Doing a great job mate, alcohol, work and family is a tough balance. Especially when your work is alcohol, which I also work in. Keep the great content coming man!

as a mezcal officianado this is well done....great selection of agaves, varietals and regions. love the flavor descriptions, which are strangely accurate, especially for the uninitiated. not surprised by what he liked (vago and bozal), but im actually glad he liked the derrumbes (blue bottle), its very unique, way out there flavor profile, glad he appreciated it. Props to the research and attempts at the pronunciation of the towns and agave species. Also glad he survived it, especially when most of this stuff is 90-100 proof. agan, well done!

To say “I had a Mezcal Mule” is like saying “I had a Single Malt Mule” or “I Customize an Italian Sport Car”: it’s so vague and widely generic that it doesn’t really mean anything.

Spanish has consistent vowel pronunciations- ‘i’ is always pronounced like a hard ‘e’ in English. So, Jalisco is pronounced “ha-lee-sco”.

Also, I'd say it's more like the difference between brandy, Armagnac, and Cognac: each category is progressively more restricted geographically, in addition to the existing restrictions on age, ingredients, etc., and technically there are brandies made with all sorts of eaux-de-vie but people will generally (correctly) assume grape unless otherwise noted. The best analogy in whisky would be Scotch vs. single malts (you can make a rye malt, technically, but almost all are barley-based) vs. single-grain spirits vs. blended grains (i.e. bourbon, rye, or the Canadian+Scottish approach of distilling each component separately and blending the results).

Pour them the counterintuitive way for a much smoother pour. The same way you pour turpentine and other canned spirits.... Also if your experience with pouring turpentine and other canned spirits is aggressive... Pour it the way your supposed to pour those 5th element bottles.

Keep the random flavor associations coming! Normal palette notes are great, but if it’s something random, I wanna hear it. Like, I’d rather hear the “wow this tastes like my grandma’s house” than some super technical complex note that I might not relate to.

Nice vid Greg! Some extra comments from what I’ve learned: -For tasting, it’s recommended to chew the mezcal or coat the entirety of your mouth with the sip -Fruit and sweeter flavors aren’t uncommon to other varietals of Mezcal, they’re just less likely for Espadín (and espadín is the most mass produced varietal and most likely to be found in the US so I usually expect smoke as a cornerstone flavor) -My favorite mezcal I’ve ever had used poultry in the pit to add a layer of savory to the taste. -Dont quote me on this but I believe there are some US import laws that force some higher proof mezcals to be cut with water. But you’re right, traditionally they are not cut with water -Like another comment said, a lot of these distilleries don’t think about the ecosystem and over harvest. I couldn’t come up with a good method to identify ethical versus not, so I don’t have a good solution. Just something to be aware of.

@@jairlopez893 Pechuga and Peloton are two I know of. I’m sure there’s more. There’s a Mezcal Old Fashion I had in the ghost donkey speakeasy in the Cosmopolitan casino in Las Vegas that uses Peloton. Would recommend!

The Agave Road Trip podcast has an excellent breakdown of the differences between tequila and mezcal, S2E4 gets into the reasoning why this isn’t actually the case! I don’t fully understand it tbh, but they are distinct agave distillates, just like sotol and raicilla.

I love all the associations to smell and childhood. My nose works similarly. This was a great episode. I lived in Tepic Nayarit, Mexico and was able to visit several of the ranches that made Mezcal. Great job on the pronunciation, what a lot of people don’t realize is that there is a mix of Spanish and native Otomi from this region.

I bought a bottle one time in college because it was the highest proof thing I could find that wasn't Everclear and because it had a scorpion on it. Did not like the taste at first, but it grew on me, and now mezcal is my favorite spirit. Now I know more brands to try. Thanks Greg.

Musician who works with craft beer here. Tasting notes in pitch is certainly a thing! Fresh, hoppy IPAs tend to taste like treble, while barrel aged imperial stouts usually hit a lot of bass notes. And very occasionally, you'll taste something which is more or less just liquid tinnitus...

Disappointed there aren't many mezcal options in my local stores as I've recently become a fan. I started using it in a cocktail to replace the smokey taste of High West Campfire whiskey and actually liked the drink better with mezcal.

Dude, kudos for going through as many as you did, I feel you! Having worked at a mezcal focused bar and figuring out what were the most intro friendly bottles was a goddamn nightmare, especially for the people that thought it was like tequila (regardless of my explaining it wasn't). You can definitely find those more subtle notes after a while of sipping lol Salúd greg!

This video really highlights what I’ve enjoyed about mezcal that I never found in my (limited) whiskey and scotch explorations - the breadth of the palate is massive and there is so much variety that it’s easy to stay interested.

Very interesting episode! Mezcal is so versatile.... One thing surprised me: “rubber tire” did not come up in your tasting notes. I think those green bottles taste tremendously like a tire shop smells.

I love mezcal but I never thought about the gasoline notes. I never liked the smell of gasoline, but LOVED when you walked into Sports Authority and smelled all that new rubber.

The very first Mezcal I tried I described it as being fermented in a burning tire inside of a small room. I love how you describe many of the flavors.

In college, I had a roommate who had a bottle of rock-gut Mezcal, and if there was a dooshy guy hitting on everyone, sloppy drunk sort of fellow, he would bring out this bottle of mezcal and by the end the jerk would puke and leave.

Tequila is that best friend from high school and the two of you get into all kinds of shenanigans together. Mezcal is his older brother who takes those shenanigans and ups the speed, the volume, and the danger.

If you really want to enjoy the whole experience that mezcal is do the following when you pour the mezcal in the copita do the follow put the tip of the finger in the mezcal then put it on the palm of you hand and rub it together and smell it that way you can smell all the flavors and then to drink it just sip a little and swirl it in your mouth it's gonna taste like pure ethanol. But your mouth gonna get covered by it then the next thing is kiss the mezcal this means get little sips at the time this was teach to me by a maestro mezcalero ohh I should say the finger thing only work with artesanal mezcal not with industrialize ones
