The first video in the new kitchen! I still have to figure out lighting, audio (echo), and general setup just how I want it, but I'll be getting into the swing of things over the next couple of weeks. Decided to start off with something simple I haven't made in a while; Huevos Rancheros.

Hello Ethan, many years experience of roasting fresh peppers here: cut the stem off to leave a small opening or slit small peppers when roasting, the littler ones almost always explode at high heat.

Mexican tip here, a very quick salsa recipe I like a lot for huevos rancheros: 8 tomatillos 8 chile morita (sold dried) Salt to taste Boil the tomatillos with the chiles for 8 to 10 minutes (or until the tomatilos are kinda soft and lightened in color and the chiles are hidrated) with a bit of salt in the water. Blend everything with the chile water depending on how liquid you want it (tomatillos are quite watery so you shouldn't need much) Add salt to taste and diced onion. It's really really simple, you can add or take out as many chiles as you want depending on spicyness, maybe 8 is a bit much, but the morita is so so good and aromatic, almost sweet, doesn't taste planty at all. Anyway, this recipe looks so so good, I will try your salsa in my next breakfast fr. Thanks Ethan.

Hehe. In Spanish cocina is pronounced “coh-see-nah”… The “cochina” pronunciation you did is actually from the Italian word ‘cucina’ (coo-chee-nah). The word ‘cochina’ in Spanish means a completely different thing… 😅

I hope you see this and have a fantastic day, Ethan If I could recommend something, perhaps make a video where you have to try and use as many local ingredients as you can in a set of meals. Or maybe try some experimental spices, such as Tasmanian pepperberry or some more obscure spices from india/middle east/africa.

They make this cheese near Sydney, Tasmanian Pepperberry Cheddar, so good ay, do recommend to anyone who finds themselves on holiday over these parts, you should be able to grab it at the supermarket if you're lucky

Just got myself a brand new blender tonight so I'm definitely making that charred version tomorrow for breakfast 😎 (also quick language tip: at 3:37 you should try to pronounce 'cocina' like "ko-see-nah" because pronouncing it like "ko-chee-nah" is actually the Spanish word for "filthy" so I had to pause the video and laugh for a minute 😅 sorry bro :)

Just made these tonight after watching your video! Had to make a few adjustments to mine because I couldn’t find some of the ingredients and didn’t feel like making corn tortillas. So I used pita rounds for mine which I know is completely untraditional but they can put really night especially after I toasted them. Instead of pickled onions I opted for fresh guacamole. Mine came out terrific. Thanks for inspiring me to get creative in my kitchen Ethan!

Hi Ethan- your tortillas under the broiler suggestion worked soo well for me. I only crisped one side of the tortilla- meaning the top had a crispy, slightly smoky flavour whilst the bottom remained malleable but was warmed through. Best of both worlds!

I do this very different, I tend you use a green sauce and potatoes as well as add fajita vegetables on top, really good. But every once and a while I will do the red sauce and it’s equally delicious. I also first cut the tortillas into chips before frying

Hey man! I’ve been doing your pickled onions recipe for a while now. Got it from Mike from Pro Home Cooks. It’s incredible how it’s tasty and versatlie. My friend always makes a variation of this, but everyone I asked said "it's just egg on tostada" or "it's just a chilaquiles variation (I'm a bad Mexican, idk how to spell 😅)" but this helped clear it up, crunchy Tortilla for the win! Love the new kitchen btw! Keep up the great content! (As always, love the low calorie versions/tips 😁)

Electric stoves are terrible, but swapping it out could be a nightmare if the kitchen is not plumbed for a gas stove already.

In my country there's no legal possibility to bring gas bottle to your apartment. If entire building doesn't have gas pipes, then you can have electric or induction stove only. And that is in every new building. We don't put gas pipes ('cause it's safer) in new buildings. Can't wait to see how Ethan use his stove. After many previous videos I must think how do do sh on my induction stove. Regards from Warsaw/Poland.

I just use fresh tortillas for my huevos rancheros that I make in the morning from a dough made the night before. Still malleable and no oil. And delicious! Excellent video, Ethan :)

You can get a funnel for transferring from pan to Mason jar. lol I like the beans you served up AND I also like black beans and onions as an alternative. It might not be official, BUT, serving up the crunchy version as a breakfast taco might be one way to keep the ingredients together.

Ethan thank you for always making a low-calorie option. Do you think it would be possible to make low-carb options for a lot of recipes? Most low carb recipes I find taste terrible.

It think the key is figure out small changes that did up. This sub was an easy way to change the calorie count without losing much. I think the tip is finding regular recipes and find out subs, like changing the meat, leaving out meat, changing oil or how it is applied etc

If you can figure out how to make recipes low carb, please do! I've made huevos rancheros and put them on a bed of refried beans instead of tortillas. The beans are not low carb, but have a much lower glycemic index than grain corn. Some avocado slices on top are a wonderful addition.

I've been making this recipe a lot lately :) One substitution I like to make is that roasting all the vegetables isn't really feasible to me (no broiler in my oven), but I still love the taste of the roasted serrano. So I take my carving fork, impale 3-4 serranos (I make 3-4x batches and save the remainder!), and roast them over the stove. Way faster than the roasting process and almost just as tasty!

Hope you like it in your new home and kitchen and I'm really looking forward to see you using an electic stove as I have to use one myself. Also great that you include calories and also give lower cal alternatives which is a great plus for me. Keep up the great work.

Exactly! In my country there's no legal possibility to bring gas bottle to your apartment. If entire building doesn't have gas pipes, then you can have electric or induction stove only. And that is in every new building. We don't put gas pipes ('cause it's safer) in new buildings. Can't wait to see how Ethan use his stove. After many previous videos I must think how do do sh on my induction stove. Regards from Warsaw/Poland.

@@sauron5535 I've tried induction and I like it a lot more than my normal electric stove. You can use very high heat and it takes no time to heat up or change the heat whereas with classic electric stoves you have to do everything in advance. But gas is still the best for cooking.
