In this extreme grocery budget challenge I'm going to be eating for only $1.28 per meal. I'm a frugal foodie looking to save money on groceries while trying exciting new recipes like chilaquiles verde and lemon spaghetti. Join me in this weekly grocery budget challenge and see what delicious meals I create with limited funds. These are healthy meals on a budget that are easy to prepare.
BREAKFASTS
Servings
2 Southwest Breakfast Scrambles with 1 egg each, 4 small potatoes cut in half and peppers and onions. Serve with slice of toasted bread
2 Chilaquiles Verdes with one egg each- 7 corn tortillas, 1 jar of salsa verdes, ¼ avocado, cilantro, crumbled feta, sliced radish
2 Breakfast Toasts with smashed avocado, 1 hardboiled egg, and thin sliced radish on top of thick sliced toasted bread. Served with ½ banana each
2 Huevos Rancheros with black beans and 1 egg, cilantro, chopped tomato, ¼ avocado cubed, green onions, 1 tortilla
1 Breakfast with 1 egg, side of garlic smashed potatoes and toast.
2 Breakfast with 1 scrambled egg each, 1 piece of toast and 1 banana
LUNCHES
2 Stir Fry with baby bok choy, broccoli, carrots, mushrooms, red onion. Served with 1 ½ cups brown rice. Condiments: soy sauce, sugar, sesame oil, chili garlic sauce.
2 Italian Penne Bake- Penne, canned tomatoes, mushrooms, zucchini, onions, red pepper, top with mozzarella cheese. Serve with slice of French bread. Left-overs from dinner.
1 Lemon Spaghetti with Swiss Chard- spaghetti, lemon, olive oil, butter, salt pepper, swiss chard, fresh garlic. Serve with Garlic Italian Loaf. Left-overs from dinner.
Spaghetti with tomatoes and mushrooms -served with green salad.
Soup with white beans, swiss chard stems, broccoli, carrots and 2 tortillas on the side.
1 serving 3 black bean tacos with tortilla, black beans, lettuce, tomato, feta, cilantro.
DINNER
1 Huevos Rancheros with black beans and 1 egg, cilantro, chopped tomato, ¼ avocado cubed, green onions, 1 tortilla
1 Italian Penne Bake- Penne, canned tomatoes, mushrooms, zucchini, onions, red pepper, top with mozzarella cheese. Serve with salad with tomatoes and onion with slice of French bread.
1 Lemon Spaghetti with Swiss Chard- spaghetti, lemon, olive oil, butter, salt pepper, swiss chard, fresh garlic. Serve with Garlic Italian Loaf
1 Soon Ramen Noodle Soup
1 Spaghetti with tomatoes and mushrooms -served with green salad.
1 Buddha Bowl with brown rice, black beans, cilantro, carrots. Served with baked okra and cucumber, tomato, onion salad with feta. To make salad use equal parts vinegar (white, red, or apple cider) to olive oil, add salt, pepper and sugar or honey to taste.
1 Smashed Baby Potatoes with garlic, green salad, and cucumber, tomato, onion salad.
1 White beans with toast - Canned navy beans, with garlic. Served with 2 slices of toasted bread. Top one with lemon juice. Add canned tomatoes to rest of beans and top other slice of bread.
1 Soup with white beans, swiss chard stems, broccoli, carrots and 2 tortillas on the side
1 Brown rice with veggie skewer (zucchini, mushroom, red onion, red pepper) green salad with radishes and vinaigrette

I’m so happy you are back doing your budget videos. FYI. Do not discard those Swiss chard stems. Chop them up and they are perfectly delicious to use in a stir fry , a chili , stew or even a soup. They taste like a mild celery. You can also chop them up and freeze them for some kind of casserole or crockpot dish. Yes they take a bit longer to cook than the leaves. So it’s a good idea to separate them and cook them up first in a stir fry. Welcome back 🌼🇨🇦🍁

I think those tiny green balls, AKA unknown vegetables, are pea eggplants commonly used in Thai cooking

I don't know what those things are called, but I do know how my Hispanic sister in law taught me to cook them. You add oil in a large frying pan and get it hot. Then you add the beans still in the hull & fry them on med. high until you have browning. Then add about a cup of water, add some salt. Give it a stir . Reduce the heat medium - medium low. You can add in a couple of finely diced garlic cloves. And stir. Then add a top & let them steam. If you need more water along the way, then add it. You have to cook it until most of the beans pop open. Give it one. Last stir in the sauce you made. You can eat the hulls (I don't like them) but the beans are soooooooo very good. I pop them open and enjoy them sort of like peanuts.

I love eggs basted. I fry them like sunny side up and then when the bottoms are firm I put a splash of water in the pan and cover with a lid ot foil. Then they steam the rest of the way. They cook perfectly.

An African friend of mine adds chopped onion, garlic, herbs & spices to baked beans and has them on toast. Job done ✔️

Yay you’re back! 😃 A little crushed red pepper and artichoke hearts would go well with the white beans. Stirring in some lemon juice just before serving works well too. I make a pasta dish with some of those ingredients and you need something to counteract the heaviness (which I know you already knew). If you want to go hog wild with the garlic you could rub a raw clove over the toasted bread (makes great garlic bread also). Have you ever watched the channel Savvy Sauté? She does some similar things, like trying to cook healthy on a budget. If you were ever considering doing a collab, I think you two would go well together. You each have your own style, but you both know how to cook really well and have similar aims.

Once I knew someone who made fried eggs just like you're making yours, and I was so amazed because I've never seen this method before. I always cover mine with a lid but I suppose it is just the question of habit. I love the appearance of the yolk better because it's so bright and colorful. I really appreciate how you present the finished meals. It takes some effort, but I genuinely think it is worth it to put a little more work into the presentation. I love my family's and friend's reaction to a nicely plated food, even if the meal itself is not fancy or exclusive.💝

I store all of my greens, including cilantro, wrapped in paper towels and put in a large plastic bag in the refrigerator--they last a long time (weeks)...I change the paper towels about once a week (when they are wet)...if there are lots of leaves, like chard or lettuce, I separate them and put them between the paper towels...I do not wash until I am ready to use the pieces...this helps fresh produce last a long time...dts/usa

Your channel is AWESOME!!! I have some of the stuff you bought this week so, that was a win-win. I’m mostly vegan....eggs are the only animal product I eat and I have my own organic chickens for the eggs. I have looked at so many grocery haul videos but, yours is my favorite because you buy healthy food.

Michelle, I was sorry to see you struggling with that garlic press. Toss it out and get yourself a decent microplane/rasp. It takes seconds to rasp garlic right into recipes! Best hack I ever had and have been using it for years!

Top budget tip: One of the best parts of the lemon is the zest. This gives such a flavour boost to so many dishes. Use the zest on spaghetti, in vegetable dishes, in soup, in bean dips... And speaking of beans, they make a great neutral base for creating tasty low-fat dairy-free dips. Add some roasted garlic, a small can of tuna, some chopped olives, smoked paprika or some jalepeno peppers and blend well. Makes a delicious snack or topping.

I love to chop my okra into bite size pieces and use a little olive oil cooking spray and season with salt, pepper, garlic powder and a little bit of chilli powder and then roast them. I used to hate okra because of the slime factor, then I discovered the roasted method and now I just love okra!

OMG yes!!! Have you ever tried them tossed in cornmeal and then fried? They are delicious like that also. I'll have to try your method next time I pick them up. I've always just roasted them whole with olive oil but I bet this is a great method...and really works to dry them out sufficiently for no slime. 😂

Great looking meals ❤️🙌👏👍 excellent job cooking. Congrats on crossing off 2 bucket list recipes. I’d love to make a “Chocolate delight” - it’s a no bake pudding pie that my spouse grew up eating in the South when visiting their memaw. I’d also like to find a cheat recipe for McDonald’s honey mustard nugget sauce, that stuff is bomb 😂

When buying fresh okra buy the small ones. Large ones can be tuff and can’t be used. They don’t keep long can use as soon as possible. Great fried.

Giana’s lemon pasta has been on my bucket list. My son makes a yummy beef stir fry with bok choy. Your veggie version with brown rice sounds good. I will also try your chilaquile verde. Both seem easy & look yummy. Thanks for the easy ideas. My cilantro only last a few days. I will try submerging it in water like you suggested. Thanks. I made a yummy frittata yesterday with left over stuff & items I haven’t used. Thanks again!!

@@ArdentMichelle He cooks some, mostly following instructions on packages. macaroni and cheese and spaghetti with jar sauce and meat that type of thing. I just stocked the pantry today. It was fun but exhausting, and an ouch to the bank account but I was expecting it and think I made reasonable choices.

IKEA has a fabulous garlic press. I never thought they were necessary because most of them stink. Then I tried the IKEA one and now I use it often.

that is a beautiful garlic bulb. I order groceries to b delivered and this week I was shocked to receive three tiny bulbs about the size of a large grape tomato each. I thought it was a mistake and that they'd sent me 3 cloves instead of bulbs! but no, they were just small bulbs.

Use your stems from Swiss chard, cut them up like celery cook before you add the leafy green and a great textural difference. Also great in soups! Great video

Any left over beans I refry and water down like a sauce, add a little salt or buillon. Then I make a couple quesadillas and pour bean sauce over them. Add a little chopped onions, top with sour cream, enfriholadas! Enchiladas but bean sauce instead or chili sauce!

I'm so excited to see the Armenian cucumbers! I'm growing them this year and love them with any type of vinaigrette. I made one the other day that sounded a little odd, but it was amazing. Balsamic vinegar, honey, Dijon mustard and olive oil. I added a little salt, pepper and garlic and it's our new family favorite

I love that vinaigrette also. 😋 I've been eating lots of Persian cucumbers this week, just split in half, served with sliced tomatoes and drizzled with balsamic glaze and topped with feta cheese. So refreshing!

Hi I'm new here. I love how you pick up all the healthy veggies for these challenges. I am gluten, dairy, coconut, and soy free. Even with this I cold see were I could substitute some of the ingredients and eat some of your dishes. You do a great job on your videos!💖

Little trick my mother taught me with the French bread is to slice it open length wise then cut it across into slices cross wise. Then season it with butter and garlic or olive oil and garlic to bake. It doubles the amount of bread you have.

Idea for you: Roast cherry tomatoes and add an onion to those Italian beans. It’s a yummy stew with a can of broth. Cheap, but amazing!

I love Swiss chard....LOVELOVELOVE IT. I use it just like spinach and I treat the stems like asparagus. Great video. I enjoyed myself Like your ideas

I CANNOT believe this was my first time. I didn't show the soup I made with the beautiful red stems. I chopped them up and figured they would be like celery but they didn't have much flavor. I wanted to eat them though because I figured they were super nutritious with all that color. How are you cooking the stems?

@@ArdentMichelle Use the stems anyway you are using the celery. They can go into everything. I don’t usually eat them raw. But you can give them a quick steam , and then even put them in a salad. Yes they need a bit of seasoning to give it a boost in flavour. Swiss chard is from the Beet family. The red stems do bleed red into your dish. You can get white stem Swiss chard and rainbow Stem Swiss chard as well. All are very good.

I’m probably new to the game but did anyone else know that you can eat radish greens like spinach? I’ve now had it as a salad green and stir fried with garlic, lemon and red pepper. They taste like Swiss chard or spinach . They are amazing!

Wow, I thought I only made that Cucumber Salad. I however put Green Bell Peppers in mine. I also put a bit of Honey and a Dash or 2 of Italian Seasoning. Yum

That sounds yummy. 😋 I'll have to try that. I think red bell peppers would be good also. There are probably quite a few veggies you could add with the dressing. It creates a delicious way to add healthy veggies into the diet.

You put your lemon in the press upside down. The cut part should be down and the end up then squeeze.

Great video. You're always so thorough and clear. One note - not a criticism- you use your lemon press upside down. I know it seems wrong; have a look on the internet. It might help you get more juice out. Thanks for all your hard work!

Nice light lunches. Very good. Also you used butter. I did not see it on your shopping list or staples from your pantry list. Was it factored in. Butter is very expensive where I live. That being said I would never buy margarine as it is one molecule away from plastic.

It should have been on the pantry list. I just added it. Thanks for the heads up 👍My viewers have shamed me into only using real butter 😂 I rarely ever use butter OR margarine so a carton lasts me months. I use mostly olive oil in my cooking.

Watched this today and inspired me for Taco Tuesday. Made the Huevos Rancheros for dinner with the feta. Thanks wouldn't have thought of that. Yummy. Ours costed out to about $1.20 also.

Thats so awesome! 😁 I've noticed that fetas have varying levels of intensity. I prefer a nice sharp one to a mild one. In one of my newer extreme budget videos I made the huevos rancheros with flour tortillas. They were easier to eat, but I prefer the flavor of the corn tortilla. Thanks so much for sharing! It’s important to cook Okra to eliminate that ‘slimy factor’. In any recipe with okra sauté in scant bit of oil stirring occasionally & You’ll see when trails gone it’s Good
