Since being diagnosed with Diverticular Disease in October 22, I've struggled with eating certain vegetables. I've been trying my hand at dehydrating. I haven't done much because my machine isn't adjustable. But, doing veggies like this could really help me get more of them into my diet. Especially the powdered form. It might not hurt me. Thank you.

I love dehydrating vegetables just like that. Add a little celery seed and salt mix with sour cream- vegetable dip mix!

I do meals-on-wheels type meals for my elderly dad. He's 81 and has trouble chewing some things with his dentures. I put some of this in pretty much all of his meals for extra vegetables.

I was laid up for many weeks this winter and I used my dehydrated "left over" veggies in my big thermos pot with boiling water and some salt & pepper. I brought stuff to my bedside and had soup whenever I needed food. As I felt a little stronger I made things with pasta too.

An idea or two - add a bit to stuffing, or even something like cornbread muffins. Add to sour cream to make a veggie dip (sort of a take-off of onion soup mix dip).

I love dehydrated veggies for soups, rice and pasta dishes. My spaghetti sauce has pepper, onions, squash, zucchini, asparagus, carrots, spinach and whatever else I decide to toss in. You just can't go wrong with veggies!

Ive done cauliflower, broccoli, and kale, but thats all the veggies ive ever dehydrated. Gonna have to try this cause id love to get some added veggies in dishes. Especially cause my son hates veggies. This would be easy to mix in and he wouldnt even know haha.

Funny enough I cleaned out mine yesterday, some dubious looking cocktail sausages and pork pies 2 lots of very green looking cheese and a solid lump of mayonnaise. Yours looks a lot healthier 🤣

Haha, did you know we were all cleaning our refrigerators this weekend?! I totally get the "making plans", then whoops! Other priorities. Hope things are going better now. It's great to be able to take some of the stress out of life by salvaging what's still good and dehydrating it for later use. I thought I had more patience, but I've figured out that I prefer instant gratification when I rehydrate, lol. So I really appreciate the tips about doing some cooking or blanching first. Thanks so much for sharing! 😊

The #1 thing I love about my dehydrator is that I don't throw out rotten vegetables any more! If I can't use them to cook with I can always dehydrate them and use them later. I am slowly building a cupboard like yours with various dried stock to use. I just love knowing I can try a new recipe that uses jalapeños without running to the store to buy them because I have some dried in my cupboard! I can buy a bunch of peppers on sale and dehydrate them for use whenever I want. It's so great!

I agree with you regarding the silicone sheets. Everything sticks and it is difficult to get off. Thanks for the great tip for saving produce that may otherwise end up in the compost a few days later. I had not thought of doing this.

“Use it up” mix… a great way to make sure you don’t waste veg. You can throw it in everything!

I sorta do this with the over abundance of greens in the spring/early summer - I grind it fine to use in gravies, soups/stews, etc. My kids always say "mom puts that sh.. in almost everything". Extra vitamins :)

I have a whole cupboard full of dehydrated vegetables and fruits in gallon Mason jars. All you have to do is throw in water and dehydrate them. They're perfect for soups, stews, pies, ect. Dehydrated fruits and sugared citrus peels make delicious snacks or can be added to teas. I also dehydrate chicken gizzards, hearts, livers, and feet, as well as pig ears to make treats for my Husky at a fraction of the cost of commercial products. I'd love to have a freeze dryer, but they're insanely expensive, and the dehydrator is an affordable alternative.

I like adding 2Tbs. To my hamburger when I’m making hamburgers , sloppy joes, hamb steak covered in gravy. I use the powder in my breading crumbs with my chicken breading. Adds great flavor and nutrition, of course soups, stews, roasts, baked chicken, with dry rubs too. The powder can be used on so much. I also have mushroom powder mixed in this too.

I am going to try this in the summer when I have so much veg! I use powdered mushroom, tomatos, courgette all winter long! the whole of the summer I have my dehydrator running of months at a time lol

And now you have Balance of Nature without the $90//month price tag! I make sure to add those things I won’t eat fresh, like kale, broccoli, and spinach, which are powerhouse foods. I love adding it to rice dishes. I not only do this, too, Darci, but I teach it to the students of all ages in a center for the blind! Yes, of course blind people can dehydrate food, too! I am, and I do! Cooked or blanched, dried and powdered, it can also be added to capsules for those who want it portable.

I’ve done this for years, just froze it in snack sized bags as I don’t have a freeze dryer or dehydrator and can’t afford those machines. I added it to meatloaf, I put in a steam bag then added to mashed potatoes, I told the kids it was mashed potatoes with sprinkles. 😂 Yo can add it to so much.

Freeze dryers are extremely expensive but dehydrators are very affordable. People often buy them but never use them and they end up brand new in thrift stores for about 10 bucks.

I have a round dehydrator I would have to cut the sheets differently. I have hardly used it. I was disappointed in the oranges I did. I also did a few other fruits and in the end, it was almost nothing there. The strawberries were like "where did they go"? ... But this looks like something I would really want to use. We love soups!

Wait till you dry melons 😁😁😁 Drying fruits seems to work for my allergies though. Can't have the fresh fruit without it being heated to 100°C, but after drying it, I can eat melons again! And lots of other fruit. Even though the remaining fruit are so small, they are delicious 😁

I've learned so much from watching your lessons ,love making biscuits with a variety of my powders , love putting my dry carrot tops and kale to my sauces and fried eggs there's so much you can do with all the powders , I've invested in different mills and dehydraters and blenders, blown a few blender motors so Don't go cheap ,i purchased your book and i love it, just wanted to thank you

I add my veggie powders to my meats when I roast and can them, or add to heated half pints of homemade bone broths for a cup of goodness, or cooking liquid for rice, pasta or potatoes.
