ALMOND FLOUR PANCAKES [0:39]
➥1 cup of almond flour
➥ 1 tsp of baking powder
➥ 1 tsp of vanilla extract
➥ 2 tbsp olive oil
➥ 2 tbsp maple syrup
➥ 1/4 tsp salt
➥ 2 eggs
Directions
1. In a large mixing bowl, add your almond flour.
2. Next, add your baking powder, vanilla extract, olive oil, maple syrup, salt, and 2 eggs into your bowl.
3. Mix all your ingredients together until all incorporated.
4. In a well-oiled pan, pour your batter and cook your pancakes until nicely toasted on both sides.
5. Serve!
JAPCHAE [2:12]
➥ 1/4 onion
➥ 1 small carrot
➥ 1 small zucchini
➥ 1/4 green bell pepper
➥ 2 mushrooms (preferably shiitake)
➥ glass noodles
➥ 1 tbsp soy sauce
➥ 1/2 tbsp agave
➥ green onion
➥ sesame seeds
➥ sesame oil
➥ mixed greens or rice
Directions
1. Prep your ingredients by slicing your onion.
2. Next jullienne your carrot and zucchini into thin slices.
3. Chop your green bell pepper and mushrooms.
4. In an oiled pan, add your vegetables and cook thoroughly on medium heat.
5. In a pot of boiling water, place your noodles and cook. Keep a close eye because these cook quickly!
6. Drain the hot water from the pot and add your cooked noodles into the pan with your veggies.
7. On low heat, add your soy sauce and agave and incorporate.
8. For toppings, add green onions and sesame seeds. Then drizzle with some sesame oil.
9. Enjoy with a side salad or on top of rice.
CREAMY PESTO PASTA [5:06]
➥ 1/4 onion
➥ 1 large zucchini
➥ bundle of asparagus
➥ 2 tbsp of minced garlic
➥ rigatoni or pasta of your choice
➥ 1 cup pasta water
➥ 1/4 cup of pesto
➥ 1 tbsp of sour cream
➥ 1/4 cup of cream cheese
➥ salt & pepper to taste
➥ parmesan cheese
Directions
1. Prep your vegetables by slicing your onions and cubing your zucchini and asparagus.
2. In a pot of boiling water, add your pasta or rigatoni and set aside.
3. In a large pan, add olive oil and cook your vegetables.
4. When draining your water from the pasta, be sure to save a cup of the pasta water to add to your sauce.
5. In the pan, add your pasta water, pesto, sour cream, cream cheese. Mix thoroughly to break up chunks.
6. Add your pasta the sauce and season to taste with salt, pepper, and parmesan cheese.
