I can eat this vegetable soup every day. I can't stop making this potato soup! The soup is so delicious that you will cook it many times! Today we are preparing a healthy vegetable soup with potatoes. The whole family loves this vegan vegetable soup! This healthy soup is very easy to make and very tasty! I cook this vegetable soup to eat every day! Vegetable soup with noodles will please both children and adults. The recipe for the soup with vegetables is very simple. Unique taste and super easy recipe! Every housewife cooks this wonderful vegetable soup for dinner! I can eat this vegetable soup every day! It's so delicious that everyone keeps asking for it!

RECIPE AND INGREDIENTS:
1 onion.
olive oil
Fry the onion for 3-5 minutes.
1 carrot.
We rub on a grater.
Add carrots.
mixing
Green peppers, red peppers, yellow peppers.
Cook covered for 10 minutes over medium heat.
3 potatoes.
Add potatoes.
Water 1.2L / 6 cups.
Cook covered for 10 minutes over medium heat.
Parsley, Mint, Salt, Black Pepper.
2 eggs.
Natural yoghurt 100 gr. / 1/2 cup.
Vermicelli 50g.
Cover and cook on medium heat for 12 minutes.
Add 2 more cups of water.
While the soup is cooking, let's prepare an appetizer!
Baguette.
Salt, Herbs de Provence, Red Pepper, Dried Garlic.
olive oil
Parmesan.
Bake in a preheated oven at 200°C (400°F) for 10-15 minutes.
Add parsley and mint.
Add some broth to the egg mixture.
stir.
Add egg mixture to soup.
Mix well.
The soup is ready!
Cheese toast is ready!
It turned out to be an incredibly delicious soup!

I like an idea about eggs and yogurt. The rest can be adjusted by the taste. I will likely use sweet potatoes, carrots, onion, pepper and selery sticks. Will tastes similar, but with sweet undertone. Eggs and yogurt should go well with it, too. Sour-sweet! Yummy!

This soup looks really good but it needs protein for me! I would add homemade chicken broth instead of water, some shredded rotisserie chicken and either the potatoes or the pasta but not both, too many carbs. Love the idea of the eggs and yogurt. Thanks for sharing.

Thank you, I have soup for my lunch everyday all year around just about. This soup sounds/looks delicious. As I avoid white potatoes I will try using sweet potato instead, maybe cooking it not as long.
