I love duck breast, my mum sometimes puts a nice orange sauce on it and it’s perfection. Also I love the ramen series you organized, I can’t wait to try all of them!

Excellent job for your first time Lisa! I was impressed by the fact you actually did a savory duck breast and cooked it well. It's okay and normal to flip duck breast btw. You can finish it in an oven also if you ever want to look for a lighter non skin side.

Best technique for me is searing both sides and then transferring the pan to an oven to get it up to temperature. Give it a try, maintains way more moisture and flavour.

For your first time cooking duck breast you did really well. For future reference you're generally better off scoring the skin at a 45 degree angle. You've certainly come a long way from the steaks you cooked a year ago that had no crust on the outside and were overcooked on the inside. Keep it up!

@@Ja44495 yes. Scoring the skin serves multiple purposes... It helps the fat render and also helps to prevent the meat from curling as the skin shrinks more than the meat. There is method to the madness.

Try it with a honey sauce it’s very good 🔥. This is how restaurants often serve it in France (it comes from south of France). It’s called a magret de canard

Pretty much perfect. What we do is the same, but only flip it once. When the bottom side is light brown we put it in the oven to roast for 8-10 minutes

The first and only time I've had duck it was SOOOO good! Such good taste and the fat, new as well! If I lived in an area that sold it, I probably would cook it myself all the time!

You could try searing it on both sides for a minute or two & finishing it in the oven - I find it's usually easier to get a nice medium-rare piece that way.

"turn this thing too many times" Doesn't seem like a problem to me. I do the same thing for consistent results when cooking any cut of meat in a pan. :)

Nice one, I myself is a fond of duck breast, I call it rosé. Allow me to present my way of making duck breast. I don't remember where I got it, but I keep making it this way, and it's allways perfect: Score the breast, and season it (I score it thinner, and 45° offset, looks better) put the breast in a cold pan that can be put in the oven, skinside down. Medium heat for 5 mins, don't touch it. Flip it after 5 mins, cook the other side for 2 mins, than put it in the oven pre heated for 200° Celsius, for 18 mins. Thats it, let it rest for 5 mins, slice and enjoy 😁

Tip for next time, don’t scar the fat. Leave it on a pan at low heat on the fat side until the fat is only 1-1.5mm thick. (remove the liquide fat every now and then and keep it to cook potatoes ;) ). Once done, really high heat on both side to get a nice crust and then 5 -10 mins in the oven 180.

"You flip to many times!" is only valid at the beginning, after getting some semblance of a crust flipping often is better for most things!

Yes it’s a red meat so you can definitely eat it medium rare that’s what we do in France!

You can also eat chicken medium rare. There are even places that sell chicken tartare(raw chicken). It all comes down to the cleanliness of how the animal was raised and more importantly the cleanliness of the butchering process. Any food not cooked to it's recommended temperature always carries a small risk of being dangerous

Duck has higher carryover heat than chicken and beef so I'd take it off the heat at 120 next time for med rare. Awesome job for first time. I remember in cooling school running so many duck breasts before getting it down
