Ingredients
6 cups of COSTCO AP flour organic unbleached
3 1/2 cups water (🛑Tip below)
2 1/2 Tbsp instant dry-rise yeast
1/2 cup butter shortening or butter
1/2 Tbsp sugar
1 Tbsp salt (sea salt)
Optional for red bolillos add 1/2 cup chili powder + 2 Tbsp of Mexican oregano
Ingredients for tortas- Carnitas, mayo, beans, lettuce, pickled onions, tomato, guacamole, queso fresco,

⚠️ IF you are in high humidity!!! start by mixing your dough with 2 cups of water. Once well combined you can see if you need more water. If dry start by adding 1/4 of a cup at a time, mix for another 2 minutes, and adjust as needed. The dough should not be super sticky! Cloud and I are here to help and want to make sure you all are successful in your bread-making. Climate and flour will make it or break it, so take your time. You got this!!!
Tip❗️
💦 Organic "unbleached" Flour Start with 3 cups of water and add gradually
Ap Flour such as "Gold Medal flour" use Start with 2 cups of water and add gradually
High altitude bake at 385 degrees (F)- everyone else at 380 Degrees (F)
🛑 Since everyone's climate is different I suggest you start with 3 cups of water. Once everything is hydrated and mixed; You can decide if you need the remaining 1/2 cup of water.
Remember slightly sticky not overly sticky is the consistency needed

What are the tips below... I, for the life of me, can't find them. If you could get a weight of the flour in grams, it wouldn't make a difference in the type of flour or how packed your cup measures are. Could you amend the recipe with your 6 cup weight the next time you make them. I'm so looking forward to making them they are the best-looking of any I recipe I have seen.

Are you using a convection oven? 380 did not work to me. I think 400 to 450 is more accurate for a regular ghetto oven lol

Miss Stephanie, I've watched your channel for quite some time now but I hardly ever comment; This needs to be said: I'm a 57 year old mother of 5 adult men, and a grandmother of 15 grandbabies. I've cooked my whole life and fed, not only my family, but alot of children and adults in my neighborhood regardless of where I happened to be living at the time. I see that in you. You care deeply about others and your food reflects your caring heart. Times are about to get really hard...much more than what they are already. I love that you cook real food. You cook with pantry staples and that kind of food feeds the body AND the soul. I've written a book instead of just a comment, but I want to encourage you to keep on this path you're walking. Our Father loves you and you are doing His work...feeding His sheep (and teaching them how to cook). You are in my prayers and will remain there. 💙 🙏

Oh yeah! Her Birria recipe is thr BOMB! My Sicilian family goes crazy for it!! This last Christmas, they wanted Birria instead of raviolis!! I know our Sicilian elders rolled over in their graves!!!😂🤣😂

My husband and I love the old fashion bolillos. We traveled throughout Mexico and can't find the old style bolillos . All we can find is the soft no taste boltllos. Thank you for this entertaining demonstration.

I made this fabulous bread last night & used your Birria recipe for it instead of Tortillas!! OMG!!! It's fabulous this way!!!!! The bread is able to hold up & soaked up all of the juice! The 1st time I've ever baked successful bread!! My mom is 92 and it's difficult to get her to eat anymore . Wow! It was great to see her eat so much!! ThankQ!!!
