Dale, if you meet makassar people and other east indonesia people, you don't need to be afraid because it looks like they talk too harshly somewhat different from the western part of Indonesia which speaks softly. . that's how it is in speaking. but they are good.

For natural juice you can always said to the seller like this "tanpa gula dan susu pak/bu" Tanpa: without, gula: sugar, susu: milk, pak: sir, bu: mrs. They will give you natural juice. Also nasi goreng jawa is Javanese fried rice

I always tell the 'nggak pakai gula, nggak pakai kental manis' request (no sugar and no condensed milk) every time I order fruit juice, the added sugar is like a default for beverage here, so tell the seller the phrase just to be sure.

Nasi Goreng Jawa simply means Java style fried rice. Ambyar means scrambled, so they just scramble the eggs with the fried rice. What makes nasi goreng Jawa is the seasoning and the cooking method. It usually use sambal, garlic, shrimp paste, and kecap as the base for the seasoning, usually tastes sweeter and it's cooked with charcoal so it has nice charcoal fragrant to it. I guess when it comes to expensive place, can't expect much for it to taste like the authentic/traditional one. Best place to get fried rice is from the street. Anyway enjoy your time in Sulawesi Dale. 👍

You are totally right about the 4/10 Nasi Goreng in Airports, Dale. Ironically, the more "clean and hygienic" a restaurant is in Indonesia, usually they are less tasty but more expensive 😂. The "legendary" street side stalls are almost always the best unless you know exactly which restaurant is good.
