How I came up with this: The artist reveals that this is supposed to be a coelacanth (fish) stomach. Before this reveal there were speculations that it was Ba-wan Taiwanese meat ball. Using this idea I based the filling off Ba-wan, but I couldn't use Ba-wan's exterior to make design and pleats as it is too sticky and inflexible, so I used Har-gow exterior (which I have a separate video on kzfaq.info/get/bejne/rt5-erhe2tXFoIk.html). The 3rd dish fused in this is a soup dumpling, for this I used the collagen from chicken wings and to give it that orange color, I used spicy bean paste (also used for some Ba-wan recipes). Changes I could have made was putting more soup dumpling filling but that's about it. I tried to steam the whole thing before but the wrapper would break (it cooks in 5 minutes) vs the meat filling that would be raw (cooks in 15 min because of size) I hope you enjoy!

I love your interpretation of this dish! I know they say it's supposed to be coelacanth stomach, but it still looks more like a huge dumpling to me. I have been trying so hard to find anything dishes that use fish stomach to see if a haggis-influenced coelacanth stomach would look anything like this. I found n o t h i n g. The closest thing I found was a stuffed fish maw dim sum, but that actually uses the gas bladder fish use to help them swim, not the stomach. I'll def try this dim sum when I get the chance to see if it's anything like this food. It seems like any stuffed-organ dish wouldn't move the same way the dish moves when Chihiro's dad picks it up and puts it on the plate, and then sucks it into his mouth. When it comes down to it, stuffed-stomach is kinda like a type of sausage, it's hard packed and just wouldn't move the way the dish is animated. I'm convinced the dish they based it on just doesn't exist in reality, but it would be very difficult to explore more obscure resources without knowing Chinese or Japanese. I could be wrong, but I think you've made about the closest thing we can get based on what's shown in the movie. Great job and I can't wait to try this out for myself! 😍

@@TheMistyKissCoelacanth means a fish since the Cretaceous period. It's a dinosaur fish that's why it's extremely rare and if you find one it's being sold for exorbitant prices. The author was obviously very wealthy to have eaten it.

This feels super close to the recipe, however it what ever he was eating looked extremely soft and squishy, and almost slimy so it's probably filled with more of a stew or something

It's actually a dish called 肉圓 Rouyuan from Jiufen, Taiwan. The outside is rice flour and sweet potato starch with meat, mushroom and soup inside it. They typically put it in a bowl first then cut it open so the juice flows out. The dad just slurped the whole thing whole. Hayao Miyazaki visited the famous food street just before he started making spirited away and drew inspiration from it. There's a famous Teahouse there too with traditional white masks similar to no faces mask as well. And the streets during the night time scene are very close to Jiufen at dusk too, steps and all.

Man, cooking in a white shirt. Now you're just showing off! I usually wear junky, 10-year old shirts around the house and I still wear a chef's coat whenever I'm making anything more complicated than a boiled egg, let alone something that might spatter me. The dumpling looks tasty! Worth the risk. Probably.

I don't think it's going to work, although I'm sure I've seen recipes on it but I don't think it makes much sense Blending wheat starch and corn starch to make the wrapper is more ideal, corn starch adds strength to the dumpling and makes it tougher/chewier. So if you use all corn starch I don't think the texture would turn out great :s
