There aren't many more mobs left to do (for now): Allay Elder Guardian Ender Dragon Frog Giant Skeleton Horse Tadpole Trader Llama Tropical Fish Wandering Trader Warden Zombie Horse Like the illusioner, there is no spawn egg for the giant, so you will need to use the summon command. But appearance-wise it's just a zombie, but way bigger. And while the allay, frog, tadpole, and warden are still in development, they are all available in the latest snapshot.
