Tho Joe could read these so it maybe is not the best way to find a prank.. Also a good prank could be to give him something that should have sugar on top and instead of sugar you pour a powder or flour over it, like doughnuts? Or you could make a drink for both of you, you should make it in the same bowl, and the key for a prank is to make something very bitter or sower into the ice cubes and in front of him you should pour it with those ice cubes with that bad flavor for both of you, you can do this to multiple people noone will suspect, and just remember to finish your drink very fast so your bad flavored ice would not melt and their will, because if the drink is not cold enough they will wait for ice to melt it down..
