If i could give you some tips i would recommend learning decent bastion routes, using piec chart to locate the forteress,blind travel, measuring eyes(for double travel) and piechart to locate portal room.

You can do death reset, those are allowed in speedrun. And ofcourse you could have set bed in stronghold.

Just as an advice, you should've death reseted in front of the portal or something. So you just set your spawnpoint and die there. when you respawn u'll have all your stuff/hearts/hunger. its a pretty good technique

next time ur in this situation just hunger reset by dying. just place a bed, set ur respawn point, die of fall or pearl damage and then go in the portal.
