I respect Madam Tess. I found that if you don't have money, people really don't have time for you and aren't bothered about helping you ie not very empathetic. So to succeed in selling Ghanaian (African) cuisine to Chinese who are sceptical about value added goods and services is a noteworthy achievement. All those rules are are a hangover from the days of the British ruled Hong Kong. Madam Tess is very straightforward and unpretentious.
