Could also line the tops of the trucks with razor-wire so they can't just crawl around and cut their way in. I can't think of any laws forbidding that. You could also install a cage door in front of the hydraulics system. That would probably stop anyone from accessing the hydraulics without the key. As for the doors: a simple alarm, connected to the driver's seat, would stop them from accessing the trailer without the driver's knowledge. The space between the truck and trailer could probably be covered by a kevlar tarp with enough slack to allow for turning and some elastic cables inside to keep it from getting caught in the tyres. Only thing left is them fighting the driver and that can be solved with a gun.
